Butter
A fat with a significant water content and a melting range near room temperature, which is why it can both shorten and laminate.
Butter is not simply a fat. It is an emulsion of fat, water and milk solids, and all three parts do something.
The fat shortens gluten, carries flavour and holds air when creamed. The water turns to steam in the oven and contributes leavening — which is the whole mechanism of laminated pastry. The milk solids contain protein and sugar, which is why butter browns and why browned butter tastes of something quite different from butter.
Its most consequential property is that it is plastic over a narrow temperature range near room temperature. That is what makes lamination possible at all, and it is also why almost every butter-related fault reduces to the butter having been at the wrong temperature.

Water content
Butter contains a meaningful proportion of water alongside its fat, with the balance differing between standard and higher-fat 'European-style’ butters.
Stated without a figure because minimum fat content is set by regulation and differs by jurisdiction, and higher-fat butters are sold specifically for lamination on the strength of that difference.

What changes if it is left out
Depends entirely on which of butter’s three roles is being replaced. Oil substitutes for the fat but supplies no water and no milk solids, so it shortens and tenderises but cannot laminate and browns less. A hard vegetable shortening supplies fat with a wider plastic range and no flavour or browning contribution.

Storage and deterioration
Absorbs odours readily and oxidises on exposure to air and light, so it is best kept wrapped and cold. For lamination, temperature immediately before use matters more than storage.

Fat coats flour and interposes between protein strands, which is how tenderness is produced by subtraction rather than addition.
Aeration
Solid butter holds the air that sugar crystals cut into it during creaming, which is where a creamed cake’s gas cells come from.

THE EDGE THIS VOCABULARY WAS BUILT FOR. Butter’s water is real — roughly a sixth of it, and it is what turns to steam and lifts the layers of a laminated dough — but nobody has ever hydrated a bread dough with butter. Recording it as a plain performer would let flour and butter alone be judged a workable dough, which is the confident false positive the whole model exists to prevent.

Butter is plastic over a narrow range near room temperature, which is what makes its temperature a variable rather than a detail.

Water— for the water butter contributes, and nothing else
Butter is roughly a sixth water, so replacing butter with a fat that contains none leaves a formulation drier than it was. This edge exists to demonstrate the scoped model: water replaces exactly one of butter’s contributions and none of the others.
Adds no water and melts higher: less spread, less browning, more tenderness and no flavour. Many bakers use a mixture for exactly that reason.
Vegan block butter— for shortening, if the fat content is close to butter’s — and not for lamination
Transfers well in melted-fat methods and in creaming when the block is a baking block rather than a spreadable tub. A wetter spread introduces water into a shortcrust and toughens it, which is the commonest vegan pastry failure and one the packet does not warn about. Lamination is the least transferable, because the fat must stay a coherent sheet through repeated rolling.
Vegetable oil— for tenderising only, and for nothing else butter was doing
SCOPED DELIBERATELY AND NARROWLY. Oil replaces butter’s lubrication and replaces none of its structure, none of its aeration, none of its water and none of its flavour. In a muffin or a brownie that is usually the whole of butter’s job and the swap works; in anything creamed, rubbed in or laminated the recipe depended on a solid, and the result is not a variation but a failure. BakeHQ publishes no conversion ratio, because the correct adjustment depends on how much of butter’s water the formulation was counting on.
Ghee and clarified butter— for flavour and lubrication, not for water or browning
Clarification removes the water and the milk solids, so ghee cannot supply the steam a laminated dough needs or the milk-solid browning route a butter-basted crust uses. Where butter was there to taste of butter and to tenderise, it is a close swap and keeps far better.
Coconut oil— for tenderising, and for solid structure only if the kitchen is cool
THE STATE-DEPENDENT CASE. Solid coconut oil looks like a block-fat substitute and is harder and more brittle than plastic butter, so it shatters where butter would spread — which matters for rubbing in and matters a great deal for lamination. Above its melting range it is simply an oil. BakeHQ does not record it as a general butter replacement, because whether it is one depends on the temperature of the room rather than on anything about the recipe.
