Ghee and clarified butter

Butter with the water and milk solids taken out — which removes two of the four things butter was doing and concentrates the third.

Fats

Also called clarified butter (INTERNATIONAL); desi ghee (INTERNATIONAL); brown butter (INTERNATIONAL) — A different preparation. Brown butter keeps the milk solids and browns them; ghee removes them.

Clarified butter is butter melted and separated, with the water driven off and the milk solids removed. Ghee is the same process taken further, with the solids allowed to brown before removal, which gives it a nutty flavour clarified butter does not have.

What remains is close to pure milk fat. That has three consequences a baker can act on. IT NO LONGER BRINGS WATER, so it contributes no steam and cannot supply the liquid a recipe was relying on butter for. IT NO LONGER BRINGS MILK SOLIDS, so it does not brown by the Maillard route the way butter does — one of the reasons butter-basted things go golden. And it keeps far longer without refrigeration, because it was the water and the solids that spoiled.

AS A FAT IT IS STILL SOLID AT COOL TEMPERATURES AND SOFT AT WARM ONES, so it can be rubbed in and can be creamed, though most bakers find it creams less well than butter. It is often sold soft enough to spoon, which is a state closer to softened butter than to cold, and treating it as a block fat without checking is a common way to lose a lamination.

In practice it substitutes best where butter was there for flavour and lubrication, and worst where the water mattered.

What clarification removes

Clarification removes the water and the milk solids and leaves the fat. Because butter is only about four-fifths fat, a given weight of ghee carries more fat and less of everything else than the same weight of butter — so a one-for-one swap by weight changes the fat, the liquid and the browning behaviour at once.

The definition of the process. BakeHQ publishes no conversion factor, because the right adjustment depends on which of butter’s jobs the recipe was using.

What changes if it is left out

Butter replaces the flavour and the fat and reintroduces water and milk solids, which is usually harmless and occasionally the whole point. A neutral oil replaces the fat and the lubrication and none of the flavour.

Storage and deterioration

Keeps at room temperature far longer than butter, because the water and milk solids that support spoilage have been removed. This is the practical reason it exists in hot climates.

    Clarification removes the water and the milk solids, so ghee cannot supply the steam a laminated dough needs or the milk-solid browning route a butter-basted crust uses. Where butter was there to taste of butter and to tenderise, it is a close swap and keeps far better.
