A croissant is the hardest product in this seed catalogue and the most useful one for understanding lamination, because it is leavened twice by unrelated means.

A yeasted dough is folded around a sheet of butter and rolled repeatedly, producing dozens of alternating layers. In the oven, the yeast’s carbon dioxide inflates the dough as it would in any bread, while water in the butter turns to steam and forces the layers apart. The dough layers set around those gaps, giving the open, honeycombed interior.

Everything difficult about a croissant follows from one requirement: the butter must remain a continuous, plastic sheet throughout. Too cold and it shatters into fragments, which is dispersion, not lamination. Too warm and it merges into the dough, which is also dispersion. The workable window is narrow, and it is why temperature control matters more here than technique.

Butter leakage is a diagnosis, not an accident

Butter pooling on the tray during baking means the layer structure failed before the dough set. Two quite different causes produce it.

If the butter was too warm during rolling, it merged into the dough and there were never continuous layers to hold it. If the butter was too cold, it fractured under the rolling pin and the fragments left gaps through which molten butter escaped once heated.

The two are distinguishable before baking: a merged lamination shows a greasy, uniform dough surface, whereas a fractured one shows visible butter shards through the dough. The corrective actions are opposite, which is exactly why guessing is expensive.

    The layers are inflated by steam, and each one has to hold it. A dough that leaks steam between layers produces a bready croissant rather than a laminated one.

  • Gluten inhibition

    The butter between the layers is doing this — it keeps the sheets of dough from bonding into one mass, which is what makes the structure layered rather than solid.

  • Hydration

    The same omission on the product this whole model exists to get right. Flour and butter alone were reaching croissant, because nothing said a laminated dough is still a dough and needs liquid to become one.

  • Aeration

    A croissant rises twice — the yeast raises the dough and steam from the butter layers lifts them apart during the bake. The steam does nothing without the fermented dough underneath it, so the yeast is the requirement. Creamed-in air does not substitute, which is why the mechanism is named.
