A creamed biscuit dough whose final texture is decided almost entirely by fat temperature, sugar type and how far it spreads before setting.

Also called chocolate chip biscuit (UK) — Less common than the American term even in British usage, because the product itself is American in origin.

The chocolate chip cookie is the most instructive small bake on this site, because it is a system where four variables visibly trade against each other and nothing is hidden by a tin.

A cookie bakes as a race between spreading and setting. Fat melts and the dough flows outward; simultaneously, water evaporates, sugar concentrates, egg proteins coagulate and starch gelatinises until the structure can no longer move. Anything that delays setting or hastens melting produces a thinner, crisper cookie. Anything that does the reverse produces a thicker, cakier one.

This is why the same dough gives a different result when it is cold, when the tray is already hot, and when it has rested overnight — and why 'my cookies spread too much’ has at least six distinct causes that a good diagnosis can tell apart.

Why resting the dough changes the result

Resting a cookie dough overnight in the fridge does at least three separate things, and they are often conflated.

It cools the fat, which delays melting and reduces spread. It allows the flour to hydrate more fully, which raises viscosity and further reduces spread. And it gives time for reactions between sugars and proteins to proceed, which is generally credited with the deeper, more complex flavour of a rested dough.

The first two are mechanical and immediate. The third is more often asserted than measured, so BakeHQ records the flavour effect as common practice rather than established science.

What this product needs done

  • Binding

    Cookie dough must hold together through handling and spread without disintegrating. Lift matters far less, which is why cookies tolerate egg replacement better than cake does.

  • Structure building

    Cookie structure comes from set starch and coagulated egg, which is why gluten-free cookies are among the easier swaps.

  • Gluten inhibition

    Fat and sugar both restrain the network. A cookie with a developed gluten structure is a bread roll.

  • Hydration

    A cookie dough contains little free water and cannot contain none: the flour has to be wetted for any structure to form and the sugar has to dissolve to do its work. In most formulations the egg is the entire liquid, which is the clearest case for recording egg as a real liquid contributor.
