Water
The ingredient every other reaction in baking depends on, and the one whose quantity most strongly determines how a dough behaves.
Water is doing more jobs simultaneously than any other ingredient on this site. It hydrates flour so gluten can form. It dissolves salt and sugar so they can act. It allows starch to gelatinise. It provides the medium for fermentation and for the flour’s own enzymes. And in the oven it becomes steam, which is a leavening gas in its own right and the entire lifting mechanism in choux and puff pastry.
Expressed as a percentage of the flour weight — the hydration — it is the single most influential number in bread. A dough at 60 per cent and the same dough at 80 per cent are different products requiring different handling, not the same product made wetter.
Water temperature is the most practical control a home baker has over fermentation rate, and is far more effective than adjusting yeast quantity.
What changes if it is left out
Nothing in baking proceeds without water in some form. Where a formulation appears to contain none, the water is arriving in something else — in butter, in eggs, or in milk.

Does water hardness matter?
Baking texts routinely state that very soft water produces slack, sticky dough and that very hard water tightens it, with moderately hard water preferred. The mechanism offered is that dissolved minerals affect gluten and that they influence yeast activity.
BakeHQ records this as common practice rather than established science. The claim appears consistently in professional literature, but the effect at the range of variation found in domestic tap water is small relative to flour, hydration and temperature, and it is not something a home baker should reach for before those. It is a real variable in commercial bakeries, which is where most of the discussion originates.

THE ONLY INGREDIENT THAT SATISFIES HYDRATION OUTRIGHT. Everything else that carries water — milk, eggs, butter, syrup — arrives with other things attached and in quantities BakeHQ does not know. Butter is roughly a sixth water, so replacing butter with a fat that contains none leaves a formulation drier than it was. This edge exists to demonstrate the scoped model: water replaces exactly one of butter’s contributions and none of the others.
Eggs— for glazing only, and it browns markedly less
A surface brushed with water or milk still browns and sets differently from a bare one, because it delays crust formation and, in the case of milk, adds protein and sugar. It is a poor imitation of an egg wash and a legitimate one where no egg is available — an honest example of a substitution that works for exactly one function and badly even there.
Cultures built from this
Water sets the hydration, which controls both how fast the culture ferments and whether it favours lactic or acetic character. Its temperature is also the one way a baker can damage a culture irreversibly.

Only where the recipe wants acid. Substituting water for buttermilk removes the acid a bicarbonate leavener may depend on, which is a leavening change rather than a liquid one.
Milk— for the liquid, at the cost of a browner, softer, richer result
The most common liquid substitution in baking, and it is a real one — milk genuinely supplies the liquid phase. What it does not do is supply only that: the lactose browns, the fat tenderises and the protein softens the crumb. Going the other way, water leaves a lean formula paler and chewier and stales it faster.
