Bread rolls
Small breads where the surface-to-volume ratio changes everything: they prove faster, bake faster, dry out faster, and are shaped more times than a loaf.

A bread roll is not a small loaf, and treating it as one accounts for most of what goes wrong. Dividing a dough into a dozen pieces multiplies its surface area several times over, and every difference follows from that.
THEY PROVE FASTER AND OVERPROVE FASTER. A small piece warms through quickly and ferments at the temperature of the room rather than the temperature of a large cold mass. A tray of rolls proved for a loaf’s time is usually past its best.
THEY BAKE FASTER AND DRY OUT FASTER. Heat reaches the centre of a roll in a fraction of the time, so the bake is short; but the same ratio means a roll loses moisture rapidly once cut or left out, which is why rolls stale conspicuously within a day.
SHAPING MATTERS MORE, NOT LESS. Each roll needs its own taut surface to rise upward rather than outward, and a dozen pieces means a dozen chances to get that wrong. Rolls that spread flat on the tray have usually been shaped without building tension, not underproved.
MOST ARE ENRICHED, and softness is the reason. Fat, milk and sometimes egg give the tender, tearing crumb expected of a dinner roll or a burger bun, and they slow fermentation in the process — which is why a soft roll dough is slower than a lean one at the same temperature.

Why rolls join up on the tray, and when that is deliberate
Rolls placed close together and proved fully will touch and fuse, giving soft pale sides where they met and a tear-apart batch.
That is the intended result for a pull-apart tray bake, and a fault for a burger bun that needs a crust all round. The lever is spacing before proving rather than anything about the dough, and the mistake is usually spacing them as they are when shaped rather than as they will be when proved — a roll roughly doubles.
The related complaint, rolls that flatten into discs, is almost always shaping. A piece rolled without building surface tension has nothing directing its expansion upward.
