Shortbread

Shortbread is flour, butter and sugar. There is no egg, no added liquid and no raising agent, and every property it has follows from that austerity.

WITH NO ADDED WATER THERE IS ALMOST NO GLUTEN DEVELOPMENT. The only water in a classic shortbread is the water in the butter, and the fat coats the flour before much of it reaches the protein. The dough is therefore short by construction rather than by technique — the fat interrupts the continuity of the starch and protein structure, and what would otherwise be a tough biscuit becomes one that fractures cleanly.

WITH NO LEAVENING, nothing lifts it. The slight rise it does have comes from steam and from air worked in during mixing, which is why shortbread is baked low and slow: the aim is to dry it through and set it without colouring it, not to make it rise.

That leaves fat as the dominant variable, and it is why shortbread is one of the clearest tests of a fat’s behaviour in the catalogue. The butter must be plastic to be worked in evenly; melted butter gives a greasy, dense biscuit, and butter that is too cold leaves lumps that bake as holes.

The proportion is traditionally described as one part sugar, two parts butter, three parts flour by weight. BakeHQ records that as a convention bakers share rather than as a specification — real recipes vary, and rice flour or cornflour is often substituted for part of the wheat flour specifically to reduce gluten further and increase the sandy fracture.

How it keeps

Keeps far better than most baked goods, because there is very little water in it to lose or to move. Its enemy is the opposite one — a shortbread left open in humid air GAINS water and softens, which is why it wants an airtight container to keep moisture out rather than in.

The direction follows from the water-activity account rather than from a study of shortbread specifically: a low-water-activity biscuit in contact with more humid air gains water until the two equalise. That is why the storage instruction for a crisp biscuit and a loaf point in opposite directions.

Why shortbread dough is sticky, and why more flour is the wrong answer

A shortbread dough that will not come together, or that is too soft to roll, is almost always a temperature problem rather than a hydration one.

There is very little water in the formula, so a dough that feels wet is a dough whose butter has softened past its plastic range. Chilling recovers it. Adding flour changes the ratio permanently and produces a drier, tougher biscuit that is no longer short.

The test is what it feels like: a dough that is greasy is warm, and a dough that is genuinely dry and refuses to cohere is under-mixed or over-floured. Those want opposite corrections, and they are told apart by touch in a second.
