It was in the oven too long

Common

A cake continues losing water for as long as it is hot. Past the point where the structure has set, every additional minute is drying rather than baking — and the edges, which are hottest and have the most surface, dry first. The result is a cake that is dry throughout and noticeably tougher at the outside, often with a thick, hard crust.

What to change

  • Test for doneness rather than trusting the time

    Start checking well before the recipe’s time is up. A skewer should come out with a few moist crumbs rather than clean — a genuinely clean skewer usually means the cake is already slightly past its best. The cake should also be just beginning to pull away from the sides of the tin and spring back when pressed lightly.

    Any cake, and particularly in an oven whose real temperature is unknown.

    Trade-off: Opening the door early matters for a cake that is still rising, so check late rather than often.

More flour went in than the recipe intended

Common

Flour compacts, so a cup dipped into the bag holds substantially more than a cup spooned in and levelled. Extra flour absorbs liquid the formulation allocated elsewhere and raises the ratio of structure to tenderiser, giving a drier, denser, more crumbly cake. The error is invisible because nothing was done wrong procedurally, and it is the strongest single argument for weighing.

Common

Fat coats flour particles and restrains gluten; sugar competes for water and interferes with both gluten and protein setting. Both are tenderisers as much as they are flavour, and reducing either — as 'healthier' adaptations routinely do — lets the structure set firmer and drier. The cake is not badly made; it has been reformulated toward toughness.

The oven runs hotter than its dial says

Common

Domestic ovens routinely differ from their dial, often by enough to change a bake materially, and the offset is usually consistent. An oven running hot drives moisture off faster and sets and browns the outside before the inside is done, so a cake following its recipe exactly comes out dark and dry at the edges and sometimes underdone at the centre. The counterpart cause, an oven running cool, is recorded separately because it produces almost the opposite crumb.

Crumbly and dry are different faults with different causes

They arrive together often enough to be treated as one problem, and separating them is most of the diagnosis.\n\nCRUMBLY BUT MOIST means the crumb has too little to hold it together relative to its bulk — too much flour, or too little of the fat and sugar that tenderise and bind. The cake tastes fine and falls apart.\n\nDRY AND TOUGH means moisture has gone, or the structure set harder than intended. Overbaking does the first; reducing the tenderisers does the second.\n\nA cake that is dry at the edges and fine in the middle is neither: that is a heat distribution problem, and it belongs with uneven baking rather than here.

The one about adding syrup

The standard advice for a dry cake is to brush it with sugar syrup, and it works — but it is worth being clear about what it does.\n\nSyrup adds moisture back to a baked crumb and makes it palatable. It does not undo overbaking, restore a broken structure or repair a crumb that was short of fat. It is a rescue for a cake already made, not a correction to the process.\n\nWorth doing when a cake is already dry. Worth not needing, by weighing the flour and checking early.

  • Cornbread

    THE PRODUCT-LEVEL EDGE. Cornbread is filed under bread and goes dry the way a quick bread does, so the family rule alone would refuse it. The graph says so explicitly and the search bridge prefers the product over the family for exactly this case. SPRINT 21 NARROWED THE OTHER SIDE OF THIS PAIR. Cornbread also carried `bread-crumbly`, and once `crumble` and `fall apart` became symptom vocabulary the two models became reachable by the same words for the same product — BAKE-V024 refused it, correctly. The bread crumbliness model is about a gluten network weaker than the method assumed, and cornbread has no gluten network to weaken. This edge is the right one and the other was removed.

  • Muffin

    Over-baking a small cake is quick and the crumb shows it immediately.

  • Brownie

    Dryness is the defining brownie failure, and the causes are the ordinary cake ones.

  • Carrot cake

    Ordinary overbaking and flour-quantity causes.

  • Pound cake

    A high-flour creamed batter dries readily if overbaked.

  • Fruit cake

    A long bake at low temperature is easy to overrun.

  • Cupcake

    The short bake makes overbaking easy and its effects immediate.

  • Red velvet cake

    Ordinary overbaking causes.

  • Swiss roll

    A dry sponge is why a Swiss roll cracks, so the dryness model is the diagnosis behind the crack.
