Carrot cake
An oil-based, vegetable-loaded batter cake that behaves nothing like a creamed sponge — moist by construction, and dense for reasons a sponge never has.

Carrot cake is a chemically leavened batter cake made with oil rather than butter and carrying a large quantity of grated vegetable. Both of those change its behaviour enough that advice written for a creamed sponge is often the wrong advice.
OIL RATHER THAN BUTTER MEANS NO CREAMING. Butter is creamed to beat air into solid fat; oil is liquid at room temperature and cannot hold air at all, so a carrot cake gets essentially all its gas from the chemical leavener. It also means the fat stays liquid at eating temperature, which is why the cake seems moister than a butter cake of the same water content — the mouthfeel is fat, not water.
THE CARROT IS MOSTLY WATER, and that water joins the batter during baking. It is why the batter looks too stiff and the cake comes out damp, why an over-generous hand with the carrot produces a heavy, wet middle, and why the same recipe behaves differently with coarsely and finely grated vegetable — coarser shreds release water more slowly and leave visible texture.
THE SPICES AND THE FROSTING ARE NOT INCIDENTAL to how it keeps. A high-moisture, oil-rich crumb stales slowly, and cream cheese frosting is perishable in a way buttercream is not; that combination is why carrot cake is one of the few cakes routinely refrigerated, and why refrigeration firms the crumb in a way that is reversed by letting a slice come back to room temperature.

Why a carrot cake sinks or comes out wet in the middle
The two are usually the same fault. A batter carrying a lot of water needs enough time at a moderate temperature for that water to leave and for the starch and egg to set. Baked too hot, the outside sets and colours long before the middle has finished, and the middle stays wet or falls once it is out of the oven.
The second cause is quantity. Recipes state the carrot by weight after grating for a reason; a generous eye adds water the formula was not built for, and no baking time recovers a batter that is too wet to set.
The third is leavener. Chemical leavening past what the structure can hold over-inflates the batter and drops it, exactly as it does in any other cake — and carrot cake recipes tend to carry a lot of it because the batter is heavy.
