Red velvet cake
A lightly cocoa’d acidic butter cake whose colour is now added and was once partly chemical — and whose texture claim is about acid, not about the dye.

Red velvet is an acidic cake: buttermilk and often vinegar, a small quantity of cocoa, bicarbonate of soda as the leavener, and — in every modern version — added colouring.
THE ACID IS DOING THE STRUCTURAL WORK. Bicarbonate needs an acid to react with, and buttermilk and vinegar supply it. The same acidity keeps the batter’s pH low, which weakens gluten development slightly and gives the fine, soft, tender crumb the name refers to. 'Velvet' in older baking usage means exactly that texture.
THE COLOUR IS THE PART MOST OFTEN MISREPRESENTED. Anthocyanin pigments in cocoa can appear reddish-brown in acidic conditions, and the small amount of cocoa in a very acidic batter would once have given a faintly red-brown cake — nothing like the colour the name now implies. Modern cocoa is largely alkalised, which removes even that. The red of a modern red velvet is food colouring, and any account that credits the cocoa alone for it is wrong.
THE CONSEQUENCE FOR A BAKER IS SPECIFIC. Substituting Dutch-process cocoa for natural, or leaving out the vinegar, removes acid that the bicarbonate needed. The cake rises less, the crumb coarsens, and unreacted bicarbonate can leave a soapy taste. This is one of the few cakes where the acid–base pairing is genuinely load-bearing rather than incidental.

Why a red velvet is not red, and why that is usually not the interesting problem
A red velvet that comes out brown has almost always had its colouring under-dosed, or has used a liquid colouring where the recipe assumed a concentrated gel, or has had its acid removed so that even the small pigment effect is gone.
The more consequential question is what happened to the leavening. If the vinegar was left out or the cocoa was swapped for a Dutch-process one, the bicarbonate has less acid to react with — so there is less gas, a denser crumb, and a residual alkaline taste. The cake being the wrong colour is then a symptom of the same change rather than a separate fault.
Adding more bicarbonate makes both problems worse.
