Cornbread is a quick bread: a pourable batter of cornmeal, usually with some wheat flour, raised by a chemical leavener and baked immediately. Calling it bread is a naming convention rather than a structural claim — it has no fermentation, no developed gluten network, and nothing in common with a yeasted loaf except the word.

ITS STRUCTURE COMES FROM STARCH AND EGG rather than from gluten. Maize has no gluten-forming proteins, so whatever network exists comes from the wheat flour in the mix, and many traditional formulas contain very little or none. What holds the crumb together is gelatinised starch setting as it cools, supported by coagulated egg protein.

That explains the two things people find surprising about it. It is CRUMBLY by nature, and increasing the wheat flour is the direct lever on that; and it goes stale quickly, because a starch-set crumb with no gluten network and comparatively little fat has less holding it together as retrogradation proceeds.

The cornmeal grind matters more than the recipe usually says. Coarse meal hydrates slowly and gives a distinctly gritty crumb; fine meal gives a smoother, cakier one. Neither is wrong, and a recipe written for one and made with the other produces a different bread.

The long-running argument about sugar in cornbread is regional rather than technical. Sugar changes the browning, the tenderness and the keeping as it does anywhere, and BakeHQ takes no position on which version is correct.

Maize baking is indigenous to the Americas and long predates the European-style quick bread now called cornbread. The chemically leavened form is a nineteenth-century development on much older maize cookery.

Why cornbread is crumbly, and when that is a fault

Crumbliness is the default state of a bread with little or no gluten, and a great deal of cornbread is crumbly on purpose.

It becomes a fault when it will not hold together enough to be served. The levers, in order of effect: more wheat flour, which adds the only gluten in the formula; more egg, which adds protein that sets; more fat, which is counterintuitive but binds by shortening the structure into something that fractures cleanly rather than shedding; and letting it cool completely, because a starch-set crumb is still setting while warm.

What does NOT help is mixing it more. There is not enough gluten present for development to build strength, and over-mixing a chemically leavened batter costs gas and gives tunnels.
