The muffin exists on this site mainly because it demonstrates the muffin method — combine dry ingredients, combine wet ingredients, then fold the two together until only just moistened — and because the penalty for ignoring it is unusually legible.

A muffin batter has enough liquid and enough flour to develop gluten readily. Mixing past the point of moistening does exactly that, and the developed network holds the gas from the chemical leavener in large, elongated channels instead of small dispersed cells. Those channels are visible in the cut muffin as tunnels running up from the base, alongside a peaked rather than domed top and a tough texture.

It is one of the few faults in baking where the cause can be read directly off the cross-section.

A lumpy batter is the correct batter

The instinct to mix until smooth is the fault. A correctly mixed muffin batter looks underdone — lumpy, with streaks of dry flour barely incorporated — and it is finished at that point.

The remaining dry patches hydrate during the rest before baking and during the bake itself. Mixing them away costs more in gluten development than it gains in evenness.
