The top set into a crust before the inside had finished rising

Very common

Heat reaches the surface first, so the top of a cake dries and sets while the centre is still liquid and still expanding. Where that happens too early — a hot oven, a small deep tin, a shelf too high — the set surface becomes a rigid skin over a batter that has not finished growing. The interior then pushes up through the weakest part of it, which produces a dome that splits along the top. This is why the crack is almost always along the centre line, and why the same recipe in a wider, shallower tin comes out flat and uncracked. It is a heat-distribution fault rather than a formulation one, which is why adjusting the recipe rarely helps and adjusting the tin or the temperature usually does.

What to change

  • Drop the temperature and give it longer

    Where the top sets and splits while the centre is still rising, reduce the oven by a modest amount and extend the bake, so that heat reaches the middle before the surface has become rigid. Moving the shelf down and away from the top element does the same thing. Loosely covering the top once it has coloured protects it while the centre catches up.

A cake that came out with a raw or wet middle and dry edges has usually been baked too deep rather than too briefly, and adding time makes the edges worse without fixing the middle. The same geometry produces a pronounced dome, because the centre is still rising long after the sides have stopped. The correction is the tin or the temperature, not the timer.

What to change

  • Match the tin to the amount of batter

    Use the tin size the recipe names, or accept that a smaller one makes a deeper cake that needs a lower temperature and a longer bake, and a larger one makes a shallower cake that needs less of both. Where the recipe gives a volume rather than a diameter, filling to about two-thirds is the usual working point.

    Any cake, and most acutely loaf cakes and deep round tins where a small change in diameter is a large change in depth.

The oven runs hotter than its dial says

Common

Domestic ovens routinely differ from their dial, often by enough to change a bake materially, and the offset is usually consistent. An oven running hot drives moisture off faster and sets and browns the outside before the inside is done, so a cake following its recipe exactly comes out dark and dry at the edges and sometimes underdone at the centre. The counterpart cause, an oven running cool, is recorded separately because it produces almost the opposite crumb.

What to change

  • Test for doneness rather than trusting the time

    Start checking well before the recipe’s time is up. A skewer should come out with a few moist crumbs rather than clean — a genuinely clean skewer usually means the cake is already slightly past its best. The cake should also be just beginning to pull away from the sides of the tin and spring back when pressed lightly.

    Any cake, and particularly in an oven whose real temperature is unknown.

    Trade-off: Opening the door early matters for a cake that is still rising, so check late rather than often.

Too much chemical leavener

Common

A chemical leavener expands existing gas cells. Too much expands them past the point the batter’s structure can support, producing large coalescing cells with thin walls. The cake rises dramatically, the cell walls rupture, and it sinks. Excess bicarbonate of soda additionally leaves an unreacted alkaline residue with a soapy taste.

What to change

  • Reduce the chemical leavener

    Reduce the baking powder or bicarbonate of soda modestly and check that the recipe’s acid balance still works. If the recipe uses bicarbonate alone, confirm there is an acidic ingredient present for it to react with.

    Cakes that rise dramatically and collapse, show large coalescing holes, or carry a soapy aftertaste.

    Trade-off: Reducing too far gives a dense cake, which is the fault in the opposite direction.

Preventing it next time

  • Use the tin the recipe names, or adjust the temperature and time for the depth you actually have.
  • Verify the oven, since a domed crack is one of the clearest signals of an oven running above its dial.
  • Move deep cakes lower in the oven and away from the top element.
  • Do not add baking powder to self-raising flour without accounting for what is already in it.

A cracked top is not always a fault

A Madeira cake, a pound cake and most loaf cakes are EXPECTED to crack along the top, and a good one cracks evenly rather than not at all. The split is what a deep cake does when it is baked properly, and flattening it out would mean baking it cooler and longer than the crumb wants.\n\nWhat distinguishes a fault is the rest of the cake. An even crack with a properly baked crumb underneath is the product working. A crack with a dry rim and a wet middle is a depth problem, and a violent dome with a crack and a coarse open texture is usually too much raising agent.\n\nSo the crack alone diagnoses nothing, which is why the questions above ask about the crumb as well as the top.
