A baked cheesecake is a custard. Its structure comes from egg protein coagulating around fat and moisture, not from a flour network holding gas, and almost everything that distinguishes it from a cake follows from that.

IT IS NOT LEAVENED. Any rise during baking is expansion, and a cheesecake that puffs dramatically has been baked too hot and will fall as it cools. A cake that sinks has lost a structure it built; a cheesecake that sinks never had one to lose, and the flat result is normal rather than a fault.

IT CRACKS RATHER THAN SINKING, and for a reason that is the same as the cracked-cake mechanism seen from the other side: the surface sets and dries while the interior is still expanding, and a set custard has no extensibility at all. Cracking is therefore a heat-management fault, which is why cheesecake is baked low, often in a water bath, and often cooled slowly in the turned-off oven.

EGG PROTEIN OVERCOOKS WITHIN A NARROW RANGE. Past the point of setting it contracts and squeezes out moisture, giving the grainy, weeping texture that is the characteristic overbaked cheesecake fault.
