White bread is a lean dough: flour, water, salt and yeast, with little or no fat or sugar. It is the most useful product on this site to understand first, because everything else in the bread family is a documented departure from it.

Add fat and sugar and eggs and it becomes enriched. Replace the commercial yeast with a maintained culture and it becomes sourdough. Roll fat into it in sheets and it becomes laminated. Each of those changes has a predictable effect on gluten development, fermentation rate and crumb, and they are far easier to reason about from a known baseline.

Its reputation as the unambitious option is a commercial rather than a technical judgement. A well-made lean loaf is a demanding thing, precisely because it has no fat, sugar or acidity to hide behind.

How it keeps

Stales noticeably within a day or two at room temperature. Refrigeration accelerates staling rather than slowing it, because the temperature range just above freezing is close to where starch retrogradation proceeds fastest.

This is the single most useful and most counter-intuitive storage fact on the site. Freezing, which takes the bread past that range quickly, is a genuinely effective option; the fridge is not.

Why salt is not optional

Salt in bread is usually explained as seasoning, and it is, but it is not only that. It slows yeast activity, which lengthens fermentation and allows more flavour to develop before the dough is exhausted. It also affects the gluten network’s handling properties, and dough made without it behaves noticeably differently — slack, sticky and quick to over-ferment.
