Rapid process vs long fermentation

Two ways to develop a dough — energy or time — and a comparison that is usually conducted as a moral argument rather than a technical one.

The short answer

These develop the same gluten network by different means, and they are not equivalent in what else they produce. Energy builds the network in minutes and produces no flavour; fermentation builds it over hours and produces a great deal, because flavour in bread comes from fermentation by-products rather than from the flour. That single asymmetry explains most of the observable differences — and it means the common complaint that industrial bread tastes of nothing is a complaint about the missing hours, not about the mixer. BakeHQ takes no position on which bread is better. Why this comparison is hard to make fairly

Almost every published version of it is written by someone with a position, and BakeHQ’s sources are no exception.

The figures on the rapid-process side of this table come from the institution that invented the process. They are reliable for what the process is and for its own measurements, and they are an interested party on whether the resulting bread is good — so the claim that the crumb is finer, softer and keeps longer is reported as their claim rather than as a neutral finding.

The artisan side has the opposite problem: it is described mostly by people who prefer it, and much of what circulates as its advantage is sensory preference stated as fact.

What can be compared fairly is process: what each does to the dough, what each requires, and what each cannot do. That is what this table restricts itself to.
