The bread families, and what actually separates them

Three questions sort nearly every bread in the world: what raises it, what enriches it, and what grain holds it together.

Sourdough, white, wholemeal, rye, brioche, focaccia, flatbread — is there a way to organise these that actually predicts how they behave?

Three questions, and the answers predict the behaviour

WHAT RAISES IT. Commercial yeast gives control and speed. A maintained culture gives acidity, flavour and keeping, and takes hours. Chemical leavening gives an immediate lift and no fermentation flavour, which is why soda bread is made in a different way from everything else here. Steam alone raises some flatbreads. Nothing at all raises others.\n\nWHAT ENRICHES IT. A LEAN dough is flour, water, salt and leaven — so every quality it has must be produced by process, which is why baguettes are difficult. An ENRICHED dough adds fat, sugar, egg or milk, which softens the crumb, browns the crust sooner and slows fermentation. Brioche sits at the far end of that scale and its whole method exists to manage the conflict between fat and gluten.\n\nWHAT HOLDS IT TOGETHER. Wheat holds gas in an elastic gluten network. Rye holds it by viscosity, in pentosan gums, and behaves by different rules entirely. Gluten-free systems rebuild the job from starch and hydrocolloids. This is the question that decides whether ordinary bread advice applies at all.

The families

LEAN WHEAT BREADS — baguette, ciabatta, most sourdough, pizza dough. Four ingredients, all character from fermentation, shaping and steam. The hardest to make well and the most rewarding to understand.\n\nTINNED AND SANDWICH BREADS — supported by the tin, usually lightly enriched, softer crust, longer keeping. Most bread sold is here.\n\nENRICHED BREADS — brioche, challah, milk bread, hot cross buns. Fat and egg give a fine, soft, strandy crumb and a much longer proof, because both fat and sugar restrain the yeast.\n\nWHOLEGRAIN BREADS — an extraction axis rather than a separate family, and combinable with any of the above. Bran cuts the gluten network as it forms, so these need more water and give a denser loaf.\n\nRYE BREADS — a different grain playing by different rules, usually soured for functional reasons rather than for taste.\n\nFLATBREADS — leavened or not, cooked fast and hot, where the shape rather than the fermentation is the defining constraint.\n\nQUICK BREADS — soda bread, banana bread. Chemically leavened, mixed minimally, closer in method to a cake than to anything else on this list.

Why the supermarket categories do not match these

Shelf labels sort bread by colour, shape and marketing — white, brown, seeded, farmhouse, artisan — and none of those predicts how a loaf behaves or how to fix it when it goes wrong.\n\n’Brown' can mean wholemeal, or white flour with colouring and a little bran added. 'Artisan' has no definition at all. 'Sourdough' is legally unprotected in most places and is sometimes a yeasted dough with added acid.\n\nThat is not a complaint about labelling so much as a reason to have the questions above. Knowing that a loaf is lean, wheat-based and yeast-raised tells you what to expect from it; knowing it is called farmhouse tells you nothing.
