Storing bread, and the trade-off you cannot avoid

Two different problems, and most advice conflates them

STALING is starch recrystallising. It makes the crumb firm, it is not spoilage, and a completely sterile loaf still does it.\n\nMOULD is microbial spoilage and a genuinely different process.\n\nAlmost every disagreement about bread storage comes from treating these as one problem, because the interventions pull in opposite directions. The fridge slows mould and ACCELERATES staling — retrogradation runs fastest at chill temperatures above freezing, so refrigerated bread goes firm faster than bread on the counter while lasting longer before it spoils.\n\nSo 'which is best' depends on which failure you are actually racing.

The trade-off between crust and crumb

A crust is crisp because it is dry and the crumb behind it is not, and water moves steadily from crumb to crust. Where it goes next is the whole question.\n\nPAPER OR A BREAD BIN lets it evaporate away. The crust stays crisp and the crumb dries out — good for a day, poor by the second.\n\nPLASTIC traps it. The crumb stays soft and the crust goes leathery within an hour. This is why supermarket bread has a soft crust: the bag made that choice before you bought it.\n\nCUT SIDE DOWN on a board is the underrated option for a crusty loaf being eaten the same day. It seals the exposed crumb against the board and leaves the crust in the air.\n\nThere is no storage that preserves both. Choosing deliberately is the whole of the skill.

The fridge is the one option to avoid, and the freezer is the best

REFRIGERATION is the common instinct and the worst choice for quality. Staling runs fastest at fridge temperatures, so a loaf firms noticeably in a day. It is defensible only where mould is the binding constraint — a very humid kitchen, or a loaf that must last and will be toasted anyway.\n\nFREEZING effectively stops retrogradation rather than slowing it, so bread frozen on the day it was baked and thawed weeks later is dramatically better than bread three days old. Slice first: frozen slices toast straight from the freezer, and a whole loaf must be thawed entirely before any of it can be used.\n\nThis is the one intervention that genuinely matches what industrial emulsifiers achieve, and it works by stopping the physical change rather than by adding anything.

Reviving a stale loaf, and why it only works once

Warming stale bread temporarily reverses part of the firming — the crystalline starch structure partly melts, and the loaf eats fresher. Running the crust briefly under water and baking it hot restores the crust as well.\n\nWhat is worth knowing is that this is temporary and costly. The loaf stales again faster afterwards, because reheating drives off moisture that was still holding the crumb together. Revived bread is bread to eat now, not bread to put back in the bin.\n\nToasting works on the same principle and is the more honest version of it, because nobody expects a slice of toast to keep.
