The single piece of equipment that most improves consistency, because baking is a ratio problem and volume measures are unreliable.

Baking outcomes are governed by ratios between ingredient weights. Volume measurement introduces error into every one of those ratios, and the error is largest for exactly the ingredient it matters most for.
A cup of flour can vary substantially in mass depending on whether it was scooped or spooned and how settled the flour was. In a formulation where the flour weight is the denominator of every other ratio, that variation moves everything at once — hydration, salt percentage, leavening percentage.
Salt is the second case, where crystal size means a spoon measure can be out by a large factor between salt types.
What it changes
- Changes structure. Accurate flour weight fixes hydration, which determines how the dough behaves.
- Increases handling. Consistent ratios make results reproducible, which is what allows a baker to learn from a change.
Genuinely necessary
Accurate mass measurement, which is the single largest source of variation in domestic baking.
What works instead
None that is equivalent for flour and salt. If weighing is not possible, spooning flour into the cup and levelling it, rather than scooping with the cup, removes the largest single source of error.
