The problem industrial baking set out to solve
Traditional breadmaking develops dough partly through time. Long fermentation develops gluten, generates flavour, and takes hours during which dough occupies space and staff.
For industrial production that is expensive. The commercial problem of the twentieth century was how to reach an acceptable loaf without waiting, and the answer was to substitute intense mechanical energy and chemical assistance for fermentation time.
What changed as a result
Mechanical dough development processes made it possible to produce bread in a fraction of the traditional time, with a softer crumb and a longer commercial shelf life, using flours that would previously have been considered inadequate.
The trade-offs are equally real. A dough developed in minutes has not undergone the enzymatic and fermentative changes that generate flavour, which is why the resulting bread tastes mild, and why additives and improvers became part of the standard formulation.
