The final rise, after shaping and before the oven — the stage most faults are decided at, and the one most often judged by a clock.
Proofing is the rise a shaped loaf takes before it is baked. Bulk fermentation built the flavour and most of the structure; this stage decides how much expansion is left when the loaf meets the heat.
That is why so much rides on it. A loaf loaded early still has a great deal of expansion to do, and does it against a crust that is already setting — so it bursts. A loaf loaded late has spent what it had, and the network can no longer hold the gas it has made — so it collapses. The visible outcomes are opposite and the corrections are opposite, and both start here.
Almost every recipe expresses this stage as a time, and a time describes the kitchen the recipe was written in. A cool room can easily double it. The dough is the only reliable instrument, and it will tell you in about two seconds.
What it is for
To let the shaped dough accumulate the gas it will expand on in the oven, and to stop while the gluten network can still hold it.

How to tell it has worked
- THE POKE TEST IS THE ENDPOINT. A floured fingertip pressed lightly about a centimetre into the shaped loaf leaves a dent that fills back SLOWLY and does not close completely.
- Underproved: the dent springs back at once and vanishes. There is expansion still owed, and it will be taken in the oven.
- Overproved: the dent stays put and does not fill at all, and the surface may look bubbled or slack. The network has stopped pushing back.
- The loaf looks visibly swollen and feels light for its size, rather than having merely spread outward on the tray.
- It still holds a domed, taut shape. A loaf that has flowed sideways into a puddle has gone past the point the test would have caught.

Why the poke test beats every other instruction
Every alternative measures the wrong thing.
A CLOCK measures the recipe's kitchen. Fermentation rate depends strongly on temperature, so the same dough in a cool room takes far longer than the time printed, and in a warm one is past its peak before the time is up.
'UNTIL DOUBLED' measures a volume that varies by dough. An enriched dough and a lean one do not double at the same point in their own development, and for some doughs a visible doubling is already too far.
The poke test measures the thing that actually matters, which is how much elastic recovery the network has left. Full recovery means it is still strong and still owes you expansion. No recovery means it has spent both. The slow, incomplete fill is the window in between, and it is the only one of the three tests that reads the dough rather than the schedule.
It takes two seconds and it is worth doing on every loaf, because the two failures it separates look identical until the loaf is out of the oven.
The fridge does not pause it, and cold dough reads differently
Retarding a shaped loaf in the fridge slows fermentation without stopping it, and it changes the balance of what is happening: yeast activity falls sharply with temperature while the bacteria in a sourdough culture keep going relatively better, so a cold prove acidifies more and rises less than the same hours warm would.
That has a practical consequence for the test. Cold dough is stiffer and springs back faster for reasons that have nothing to do with how far it has fermented, so a loaf straight from the fridge reads underproved whether it is or not. Judge it after it has stood, or judge it by how much it grew in the fridge rather than by the poke.
The compensating advantage is that a cold loaf is far easier to score, and holds its shape better on loading — which is why the retarded overnight prove is standard for sourdough despite making the endpoint harder to read.

Routinely conflated, and the trade term “bulk proof” encourages it. They are different stages with different endpoints: bulk fermentation is judged on the dough as one mass and builds flavour and structure, while the shaped prove is judged on the poke test and spends what bulk built.

The straightforward case, and the one most recipes express as a time that belongs to somebody else’s kitchen.
Braided and unscored, so an underproved challah has nowhere to put its remaining expansion except a seam — which is why the poke test matters more here than on a loaf that will be cut.
Enriched dough proves slowly, so the clock misleads further here than anywhere else on the site.
Small units prove fast and skin fast, so the same tray can pass the endpoint between the first roll and the last.
The one product with a better test than the poke: a shaped ring dropped in cold water rises within seconds when it is ready.
Proved short on purpose, because the loaf is expected to open dramatically at the scores rather than to arrive fully expanded.
