Commercial yeast is predictable and fast; a sourdough culture is slower, more variable and produces acidity that changes flavour, dough handling and keeping quality. Neither is a better loaf in general — they are different products with different demands on the baker.

Differences that do not matter

These are real distinctions that are unlikely to change your decision. They are listed so you can stop thinking about them rather than left out so the comparison looks decisive.

  • Nutritional difference. Claims are made for improved mineral availability from a long acidic fermentation. Fewer such claims are made.

On the nutritional claims

Long sourdough fermentation is often said to improve mineral availability, principally by degrading phytate, and to be more digestible.

There is a real mechanism behind the phytate claim. What is far less clear is the size of the effect in the context of a whole diet, and much of the popular framing goes considerably beyond what has been shown.
