Bread flour
Wheat flour milled from higher-protein wheat and sold for doughs that need to hold gas through a long fermentation.

Bread flour is wheat flour selected and milled for a higher protein content than general-purpose flour, giving a dough that builds a stronger gluten network.
The practical consequences are specific rather than general. A stronger network absorbs more water, tolerates a longer fermentation before the structure degrades, and holds more gas before it fails. That makes bread flour genuinely better for bread and genuinely worse for a tender cake or a short pastry, where the same strength produces toughness.
It is one of the clearest cases on this site where 'better ingredient’ is meaningless without asking what it is for.

Higher than the general-purpose flour sold in the same market. The absolute figure varies by miller and by country, and the comparison only holds within a market.
The relative claim is safe; an absolute figure would not be. UK strong flour and US bread flour are not the same specification.

What changes if it is left out
Plain or all-purpose flour makes perfectly good bread, with a slightly less open crumb and a dough that is less tolerant of long fermentation and high hydration. The loaf is different, not failed.

SCOPED IN SPRINT 4. Authored in Sprint 1 before the scope field existed, and it was making exactly the flat claim the substitution model was later built to prevent. Both flours build structure; they build different amounts of it. Works in either direction for most bread. Substituting bread flour into a cake or pastry produces toughness, and substituting plain flour into bread gives a slightly tighter crumb and less tolerance of long fermentation.

Commonly confused with
Indistinguishable in the bag and different in the dough, with the naming differing between markets on top.

Recorded as a substitution that FAILS, because the failure is the useful information. In a lean bread the gluten network is most of the structure and nearly all of the gas retention, so swapping the flour removes the mechanism rather than an ingredient. A gluten-free loaf needs a hydrocolloid, considerably more water and a batter rather than a dough — it is a different formulation, not an adjusted one.
