The batter was too deep for the tin and the temperature

Common

Heat travels into a cake from its surfaces, and the time the centre takes to reach setting temperature rises sharply with depth. A batter poured deep enough has its edges fully set, and then overbaked, while the middle is still batter. The visible results depend on which end of it you notice. A cake that came out with a raw or wet middle and dry edges has usually been baked too deep rather than too briefly, and adding time makes the edges worse without fixing the middle. The same geometry produces a pronounced dome, because the centre is still rising long after the sides have stopped. The correction is the tin or the temperature, not the timer.

What to change

  • Match the tin to the amount of batter

    Use the tin size the recipe names, or accept that a smaller one makes a deeper cake that needs a lower temperature and a longer bake, and a larger one makes a shallower cake that needs less of both. Where the recipe gives a volume rather than a diameter, filling to about two-thirds is the usual working point.

    Any cake, and most acutely loaf cakes and deep round tins where a small change in diameter is a large change in depth.

    Trade-off: It sometimes means buying a tin, which is the one kind of answer BakeHQ is reluctant to give. The alternative — adjusting temperature and time for the tin you have — is genuinely workable and is why it is stated as the first option above.

  • Drop the temperature and give it longer

    Where the top sets and splits while the centre is still rising, reduce the oven by a modest amount and extend the bake, so that heat reaches the middle before the surface has become rigid. Moving the shelf down and away from the top element does the same thing. Loosely covering the top once it has coloured protects it while the centre catches up.

    Deep cakes, loaf cakes and anything baked in a narrow tin. Shallow layer cakes rarely need it, because heat reaches their centres before the tops can set hard.

    Trade-off: A longer bake at a lower temperature dries the crumb somewhat and browns less, so it trades one small fault for the absence of a larger one. It is the wrong answer for a cake that was fine except for being pale.

It came out of the oven too early

Very common

Gummy crumb is most often simply raw crumb. Starch needs both sufficient temperature and sufficient time at it to gelatinise fully and then set; a loaf pulled when the crust looks right can still be short of that at the centre. Dark crusts mislead here, because crust colour is a surface reaction and says nothing about the middle.

    Applies where the crumb is dense and damp throughout. It does not apply where only a band near the cut is gummy and the rest is fine, which points to cutting too early.

    Trade-off: A longer bake means a thicker, darker crust. Covering the loaf mitigates this at the cost of some crust crispness.

The oven runs hotter than its dial says

Common

Domestic ovens routinely differ from their dial, often by enough to change a bake materially, and the offset is usually consistent. An oven running hot drives moisture off faster and sets and browns the outside before the inside is done, so a cake following its recipe exactly comes out dark and dry at the edges and sometimes underdone at the centre. The counterpart cause, an oven running cool, is recorded separately because it produces almost the opposite crumb.

What to change

  • Test for doneness rather than trusting the time

    Start checking well before the recipe’s time is up. A skewer should come out with a few moist crumbs rather than clean — a genuinely clean skewer usually means the cake is already slightly past its best. The cake should also be just beginning to pull away from the sides of the tin and spring back when pressed lightly.

    Any cake, and particularly in an oven whose real temperature is unknown.

    Trade-off: Opening the door early matters for a cake that is still rising, so check late rather than often.

The oven runs cooler than its dial

Common

Domestic ovens are frequently some way from their dial setting, and the discrepancy is usually invisible because it affects every bake consistently. A cool oven delays protein coagulation and starch gelatinisation, extending the window in which a cake can collapse and leaving crusts pale and bases damp.

    Any oven whose bakes are consistently under- or over-coloured. Fixes an entire class of faults that otherwise look like recipe problems.

    Trade-off: Needs an inexpensive thermometer, and the offset can vary across the cavity.

It was cut before it had cooled

Very common

A loaf continues to set as it cools; the starch that gelatinised in the oven is still soft and full of steam when it comes out. Cutting into it at that point drags and compresses the crumb rather than slicing it, and the steam that would have escaped condenses back into the cut surface. The result is a dense, sticky band that a baker reasonably reads as underbaking.

What to change

  • Let it cool completely before cutting

    Cool the loaf fully on a rack before cutting — a rack rather than a board so the base does not sit in its own steam. For a dense or heavily rye loaf, longer still is better, and some are conventionally left a day before cutting.

    Applies where the gumminess is concentrated at the cut face and the loaf was cut warm. A fully cooled loaf that is still gummy throughout was underbaked instead.

    Trade-off: Waiting, against the considerable appeal of warm bread. Worth knowing that the loss is real: a warm loaf genuinely tastes better and genuinely cuts worse.

Preventing it next time

  • Check doneness with a probe or skewer in the centre rather than by time or by the colour of the top.
  • Match the tin to the amount of batter, because depth changes the problem more than time can fix.
  • Let it cool completely before cutting — the starch is still setting as it cools.
  • Verify the oven, since a hot oven and a deep tin produce the same symptom by the same route.

Wet in the middle and gummy in the middle are different findings

They get described in the same words and they point in opposite directions.\n\nRAW is batter: it has not reached the temperature at which the starch gelatinises and the egg protein sets, and it looks and tastes like the mixture that went in. More heat, delivered so that it reaches the middle, is the answer.\n\nGUMMY is cooked and unset. The starch gelatinised and the crumb had not finished firming when it was cut, so moisture that was still redistributing has been smeared by the knife. This one is often a cake that was fine and was cut too early, and adding bake time makes it dry rather than better.\n\nThe cheap test is the edges. If they are dry and the middle is wet, the heat never got there — depth or temperature. If the whole cake is evenly cooked and only the cut face is claggy, it was cut warm.
