Soda bread
Bread without fermentation: bicarbonate of soda, an acid, and a dough that must go into the oven before the reaction finishes.

Soda bread is raised by the reaction between bicarbonate of soda and an acid — traditionally buttermilk — rather than by yeast. That single substitution changes everything about how it is made.
THE CLOCK RUNS FROM THE MOMENT THE LIQUID GOES IN. Bicarbonate reacting with an acid in a wet mixture releases carbon dioxide immediately and continues until one reagent is exhausted. Gas produced before the loaf reaches the oven is gas that escapes, so a soda bread mixed slowly, kneaded, or left sitting while the oven heats has already spent part of its rise. This is the opposite of every yeasted instruction, where time is what the dough needs.
IT IS HANDLED AS LITTLE AS POSSIBLE, and not for the usual reason. Gluten is not wanted here; a tough soda bread is one that was worked. The dough is brought together, shaped in seconds, cut deeply so heat reaches the middle of a dense mass, and baked.
THE ACID IS NOT OPTIONAL. Bicarbonate with no acid to react with leaves an alkaline residue that tastes soapy and darkens the crumb, and it produces far less gas. Buttermilk is the traditional source because it was the by-product to hand; yoghurt, soured milk or cream of tartar do the same job. Baking powder is bicarbonate with its own acid already included, which is why a recipe using it does not also call for buttermilk.
Soda bread is associated above all with Ireland, where it became a domestic staple in the nineteenth century — bicarbonate was cheap and available, and it needed neither a maintained culture nor a long fire. BakeHQ records the association and not a date of invention.

Why a heavy soda bread is usually a timing fault
The three ways a soda bread comes out dense are all about when the gas was made.
The leavener may have lost its activity — bicarbonate is stable but baking powder is not, and an old tin gives a fraction of its stated lift. There may have been no acid, or not enough of it, so most of the bicarbonate never reacted. Or the mixture sat: mixed, shaped, and left while something else finished, by which time the reaction had largely run.
What almost never helps is more mixing, and it usually makes matters worse by developing the little gluten there is. A soda bread is one of the few things on this site where working faster genuinely improves the result.
