Brioche is a yeasted dough enriched with egg and a very large proportion of butter, giving a fine, soft, faintly sweet crumb that pulls into strands.

Everything difficult about brioche follows from a single conflict. The dough needs a strong gluten network to hold its structure, and fat coats gluten proteins and prevents them joining. Adding the butter at the start therefore gives a dough that never develops. The method exists to resolve that: the dough is mixed and developed first, and the butter is worked in afterwards, a little at a time, into a network that already exists.

The second consequence is temperature. Butter-rich dough warms quickly under mixing, and warm butter leaks out rather than dispersing. Brioche is usually chilled before shaping for exactly this reason, and a long cold retard also makes a slack, sticky dough handleable.

Egg contributes structure as well as richness — its protein sets during baking and supports a crumb that fat alone would leave collapsing.

Why a brioche splits at the side

A split down one side of a baked brioche is almost always under-proofing rather than a fault of the oven. The loaf still has expansion left in it when the crust sets, and the gas escapes at the weakest point — usually where the shaped seam sits.

The enrichment makes this more likely than in a lean loaf, because fat slows fermentation and a brioche needs noticeably longer to proof than a baker used to plain bread expects. Scoring gives the expansion somewhere deliberate to go, which is a way of choosing where the split happens rather than preventing it.

    Both enriched yeasted breads, built from different materials. Challah is enriched with oil and egg and no dairy; brioche with a great deal of butter. The fat state, the dairy content and the flavour all differ, so they are not interchangeable.
