Challah is a yeasted bread enriched with egg and oil, usually sweetened lightly, and almost always braided. It sits in the enriched family alongside brioche and milk bread, and differs from both in a way that has real structural consequences: it is enriched WITHOUT dairy, so the fat is oil rather than butter and there is no milk protein or milk sugar in it.

That choice is dietary in origin — challah belongs to Jewish tradition and is eaten on Shabbat and festivals — and BakeHQ records it because it explains the formula rather than because the site has anything to say about religious practice. A liquid fat behaves differently from a solid one: it lubricates and tenderises and cannot hold air or form layers, so challah’s softness comes from oil and egg rather than from creamed or laminated butter.

The egg does more here than enrich. Its protein contributes structure that sets during baking, its yolk emulsifies, and it is responsible for both the yellow crumb and much of the deep browning of the crust.

LIKE EVERY ENRICHED DOUGH IT FERMENTS SLOWLY. Sugar raises the osmotic pressure of the dough and fat interferes with gluten development, so a challah needs materially longer than a lean loaf at the same temperature. Recipes routinely quote lean-dough timings, which is why dense and under-risen challah is asked about far out of proportion to how often it is made.

Braiding is not decoration alone. A braided loaf has more surface for browning and expands along its length rather than upwards, which is part of why the crumb is fine and even rather than open.

How it keeps

Keeps its softness longer than a butter-enriched bread of similar age, because the fat is oil and stays liquid at room temperature rather than resolidifying into the crumb. It still stales — retrogradation proceeds regardless of the fat — and the change is felt as firmness rather than as dryness.

Challah and brioche are not interchangeable

They are both enriched yeasted breads and they are built from different materials, which shows in the eating.

BRIOCHE is enriched with butter — a solid fat carrying water and milk solids — in proportions high enough that the method has to work around it, adding the butter after the gluten network exists. The result is rich, short and tender, and it stales into something dry.

CHALLAH is enriched with oil and egg. A liquid fat lubricates and does nothing else, so there is no creaming, no lamination and no butter flavour; the crumb is softer and springier rather than shorter, and it keeps its softness longer because the oil stays liquid at room temperature.

Substituting one for the other changes the fat state, the dairy content and the flavour together. It works in the sense that bread results; it is not the same bread.

Why the crumb is yellow

Egg yolk, and nothing else. It is one of the few colour questions in baking with a single uncomplicated answer.

The depth of the crust colour has a second contributor: an egg glaze browns readily, because egg protein and any sugar in the wash take part in the browning reactions at the surface. A challah baked without a glaze is noticeably paler and is not otherwise different.
