Bagel
A very stiff, low-hydration dough that is boiled before it is baked — the boil being what makes a bagel a bagel rather than a roll with a hole.

A bagel is made from a stiff, strong-flour dough, shaped into a ring, briefly boiled and then baked.
The hydration is far below ordinary bread — low enough that the dough is hard work to mix and resists shaping — and that stiffness is what produces the dense, chewy crumb. A slack bagel dough gives a bread roll.
The boil does two things that baking cannot. It gelatinises the starch at the surface before the loaf enters the oven, setting a skin that limits oven spring and produces the glossy, tight crust; and it stops expansion early, which is the other half of the dense interior. Anything dissolved in the water — malt, and traditionally lye or bicarbonate of soda — is deposited on that skin and browns during the bake.
Strong flour is not optional here. The chew depends on a well-developed gluten network doing its work in a dough with very little water to develop it in.

Why bagels deflate in the boiling water
A bagel that collapses when it hits the water was over-proofed. The gas cells have expanded to the point where the gluten holding them is stretched thin, and the shock of hot water is enough to let them go.
The standard test is to float a shaped bagel in cold water before boiling: one that is ready floats, one that sinks needs longer. It works because it measures the thing that actually matters — how much gas is in the dough — rather than the clock.
