Bulk fermentation
The first fermentation, with the dough in one mass, where most flavour and most structural change happen.
Bulk fermentation is the period after mixing and before dividing, with the dough fermenting as a single mass. It is where the majority of flavour development happens and where the gluten network continues to develop and to be modified by the dough’s own enzymes.
It is also the stage most often judged by the wrong measure. 'Until doubled’ is a poor instruction for many doughs and a misleading one for high-hydration sourdough, where a doubling in volume can already be past the useful point.
The question the baker is actually answering is whether the dough has enough gas and enough strength simultaneously. Too little time and the dough is strong but flavourless and under-gassed; too much and it is well flavoured, gassy and structurally spent.

To develop flavour, generate gas, and allow continued gluten development and enzymatic modification of the dough before it is divided and shaped.

How to tell it has worked
- The dough has increased in volume — how much depends on the dough, and doubling is not a universal target.
- The surface has become domed and shows bubbles rather than staying flat and matt.
- The dough feels aerated and lighter, with visible structure when the container is tilted.
- It holds together when handled rather than tearing or flowing.

How long — and why the fridge changes the question
Published times run from three hours to overnight and both are right, because fermentation rate is governed by temperature far more than by anything else. A dough at 26 °C ferments roughly twice as fast as the same dough at 20 °C, so a time that suits a warm kitchen is wrong in a cold one and dangerously wrong in the other direction.\n\nThat is why BakeHQ gives no number. The dough reports its own progress: it should have risen noticeably but not doubled for most lean breads, feel aerated and jiggle as a mass, and show bubbles at the surface and edges. A poke should spring back slowly and incompletely.\n\nIN THE FRIDGE the process does not stop, it slows and changes character. Yeast activity falls off sharply with temperature while the bacteria in a sourdough culture continue relatively better, so a cold bulk ferments less and acidifies more — which is why a fridge-retarded loaf tastes more sour and rises less than the clock would suggest. An overnight cold bulk is a flavour decision as much as a scheduling one.\n\nThe practical consequence is that a cold bulk usually needs finishing warm, or a longer final proof, because the dough leaves the fridge under-fermented as well as cold.

Products that depend on this
The flavour, the acidity and much of the structure are produced during bulk fermentation. Skipping it does not produce a faster sourdough; it produces different bread.
