Rye bread
A bread whose structure comes from pentosans and gelatinised starch rather than from gluten — which is why almost every wheat instruction is wrong for it.
Also called sourdough rye (INTERNATIONAL), dark rye bread (INTERNATIONAL), pumpernickel (INTERNATIONAL) — A very dark, long-baked rye specifically; not a general term for rye bread.
Rye contains gluten-forming proteins and cannot build a working gluten network from them. Its pentosans — soluble fibre that swells enormously in water — get to the water first and physically interfere with the protein coming together. What holds a rye loaf up is therefore a viscous pentosan and starch system, not an elastic network.
EVERY PRACTICAL DIFFERENCE FOLLOWS FROM THAT. Kneading a rye dough achieves almost nothing, because there is no network to develop. The dough is sticky rather than elastic and stays that way. The crumb is close and moist by design rather than by failure, and a rye judged against a photograph of a wheat loaf will always look like a fault.
ACIDITY IS FUNCTIONAL RATHER THAN TRADITIONAL. Rye’s own amylase enzymes remain active at higher temperatures than wheat’s, and in a neutral dough they degrade starch during the bake into something gummy and sticky. Acidifying the dough — historically with a sourdough culture, which is why sour rye is the traditional form across northern and central Europe — slows that enzyme activity enough for the starch to set properly. The sourness is a side effect of a structural intervention.
THE KEEPING IS THE OTHER CONSEQUENCE. A high-pentosan, high-moisture crumb at low pH stales more slowly than a wheat loaf, which is a large part of why rye breads dominate in climates and economies where bread was baked infrequently and had to last.

The tradition follows the crop. Rye tolerates cold, acidic and poor soils that wheat does not, so rye baking is concentrated where rye grew — from Scandinavia and the Baltic through Germany and Poland into Russia.

Why a rye loaf that seems gummy may be finished
A cut rye that drags on the knife and compresses under a finger is the single commonest rye complaint, and in a wheat loaf it would mean underbaked.
In rye it usually means one of two things instead. Either the loaf was cut before it had finished setting — a rye’s starch continues to set for many hours after it leaves the oven, and cutting warm gives a paste — or the dough was not acid enough to restrain its own amylase, and the starch was partly broken down during the bake.
The first is fixed by waiting, which is unsatisfying and correct. The second is fixed by using a sour culture or otherwise acidifying the dough, and is the reason the tradition looks the way it does.
