Pita bread
A thin leavened flatbread that inflates into a hollow pocket, and does so only if the heat is fierce enough to set the outside before the steam escapes.

Pita is a lean wheat dough rolled thin and baked very hot and very fast. What distinguishes it from any other flatbread is the pocket, and the pocket is a heat effect rather than a recipe effect.
HOW THE POCKET FORMS. A thin disc meeting a very hot surface has its outer layers set almost immediately while its interior water is flashing to steam. The steam cannot escape through a set surface, so it collects in the middle and pushes the two faces apart. The bread balloons, and when it cools the two faces stay separate.
EVERY COMMON FAILURE IS THE SAME FAILURE. A pita that does not puff has let its steam out. That happens when the oven or surface is not hot enough, so the outside sets slowly and the steam leaks through it; when the disc is rolled unevenly, so it opens at the thin point; or when the dough surface is torn or floury enough not to seal. Rolling too thick removes the effect entirely, because the middle never gets hot enough fast enough.
A FLAT PITA IS NOT A FAILED LOAF. This is worth stating because the diagnostic instinct from bread applies badly: a pita has no oven spring to lose and no crumb to open. It is supposed to be flat, and its fermentation is doing flavour and handling rather than volume.

The domestic oven problem, and the honest workaround
The traditional heat regime is a very hot stone or oven floor, and a domestic oven’s air temperature is not the same thing at all — air transfers heat far more slowly than contact with a hot surface does.
What reproduces it best at home is a thoroughly preheated stone or steel, or a dry pan on a high flame, with the dough going on directly. Preheating for long enough matters more than the dial: a stone reaches its indicated temperature long after the oven air does, and a stone that is merely warm gives a bread that dries out rather than one that inflates.
