Pizza dough is a lean bread dough optimised for a different job. It has to be stretched thin without tearing and baked very fast, and those two requirements shape everything about it.
Stretching without tearing requires extensibility — the dough’s willingness to be deformed and stay deformed — as well as strength. A dough that is strong but not extensible snaps back and tears; the usual cause is insufficient rest rather than insufficient development. This is why a dough that fights back is rested rather than worked harder.
The high baking temperature is the other constraint. A domestic oven runs far cooler than a wood-fired or deck oven, so a preheated stone or steel is a genuine intervention: it supplies the rapid conductive heat to the base that the air temperature cannot.

Cold fermentation is about control, not magic
Refrigerating a pizza dough for a day or more is often described as improving flavour, and it generally does. The more reliable benefit is control: fermentation slows enough that the dough sits in a usable state for many hours instead of a short window.
The flavour improvement is real but less well characterised than it is usually stated. A longer fermentation permits more enzymatic breakdown of starch and protein into compounds that contribute flavour and browning, which is a sound mechanism — but the size of the effect relative to other variables has not been isolated in anything BakeHQ has consulted.
