Underproofed vs overproofed
The two failures look similar in the tin and produce opposite loaves — and the test everyone quotes is less universal than it is stated.
The short answer
Both give a disappointing loaf and they are opposite states with opposite fixes, so guessing wrong costs a bake. UNDERPROOFED dough has expansion left in it: it springs hard in the oven, often bursting at a seam or the score, and the crumb is tight and close with a dense band near the base. OVERPROOFED dough has already spent it: the gluten is stretched past recovery, so it spreads rather than rising, scores do not open, and the crumb is either flat and coarse or collapses into a wet band. The distinguishing signal that holds most reliably is what the loaf does in the OVEN rather than what the dough does in the bowl — an under-proofed loaf leaps and tears, an over-proofed one barely moves.

The poke test is useful and it is not universal
The standard formulation — press a floured finger into the dough, and if the dent springs back halfway it is ready — is a genuinely good heuristic and it is stated far more absolutely than it deserves.\n\nWhat it actually measures is how much elastic recovery the gluten has left, which correlates with fermentation state and is not the same thing. It reads differently at different hydrations: a very wet dough dents easily whatever its proof state, and a stiff one resists even when over-fermented. It reads differently at different temperatures, because cold dough is firmer regardless. And enriched doughs, where fat has softened the network, give a much less decisive answer than a lean dough does.\n\nSo it is a good first check on a lean, moderately hydrated dough at room temperature — which is exactly the dough it was described for — and it should be read alongside volume, surface and behaviour on the bench rather than as a verdict on its own.
Why under-proofing is the commoner mistake, and the better one to make
Most bakers under-proof, because dough is judged by the clock and kitchens are colder than the recipe assumed. Fermentation roughly doubles in rate for every several degrees of dough temperature, so a recipe’s timing is right for one kitchen and wrong for most.\n\nUnder-proofing is also the more forgiving error. The dough still has expansion in it, which produces a loaf that is tight rather than ruined — and the correction is simply to wait.\n\nOver-proofing is much harder to undo. Once the gluten has been stretched past recovery it does not recover, and reshaping degasses a dough that no longer has the strength to be re-inflated. The result is edible and it is not the loaf you were making.\n\nWhich is why, when genuinely unsure, waiting a little longer is the riskier move and cutting it slightly short is the cheaper mistake.
