The pastry families, and what actually separates them

Six families distinguished by one question — how the fat got into the flour — because that decides everything else.

Shortcrust, puff, flaky, choux, filo, hot-water — what actually makes them different from each other?

One question separates almost all of them

Pastry looks like a long list of unrelated recipes and is really a small number of answers to a single question: how is the fat distributed through the flour, and what does that let the water do?\n\nRub the fat in until it disappears and you coat the flour particles, preventing gluten from forming. That is SHORT pastry, and short is a texture: it crumbles rather than stretches.\n\nLeave the fat in visible pieces and you get pockets that melt in the oven and leave gaps. That is FLAKY pastry, and it sits between short and laminated.\n\nKeep the fat as continuous sheets by rolling and folding, and steam forces those sheets apart. That is LAMINATED pastry.\n\nCook the flour in boiling liquid before any fat structure exists at all, and you get a paste raised by steam alone. That is CHOUX, and it belongs to the family only by convention.\n\nEverything else — how much water, how it is handled, whether it is sweetened — follows from which of those four you chose.

The families

SHORTCRUST. Fat rubbed into flour until it resembles breadcrumbs, bound with the minimum water. Tender and crumbly, no layers. The base of tarts, pies and quiches. Sweet variants add sugar and often egg yolk, which shortens it further.\n\nFLAKY AND ROUGH PUFF. Larger pieces of fat left intact, then folded a few times. Some layering, far less regular than true puff, and much faster to make. Rough puff is the domestic compromise and it is a good one.\n\nPUFF. A block of fat enclosed in dough and rolled and folded repeatedly, doubling the layers each turn. Hundreds of alternating sheets, lifted apart by steam. No yeast, no chemical leavener — the rise is entirely mechanical.\n\nLAMINATED YEAST DOUGH. Puff’s method applied to a fermented dough. A croissant rises twice: the yeast raises the dough and the steam separates the layers. This is why a croissant is not simply puff pastry in a different shape.\n\nCHOUX. Flour cooked in boiling water and fat, then loosened with egg. Raised by steam alone into a hollow shell. Piped rather than rolled.\n\nFILO. Dough stretched to translucency rather than laminated, with fat brushed between separate sheets. The layers are assembled rather than created by folding, which is why filo is crisp and shattering rather than puffed.\n\nHOT-WATER CRUST. Fat and boiling water beaten into flour, giving a warm, pliable dough that can be moulded by hand and sets rigid enough to stand as a free-standing pie wall. It is the outlier: sturdy where every other pastry is delicate.

What goes wrong is family-specific, and predictable from the method

Because the families differ by how the fat sits in the flour, their failures differ the same way.\n\nSHORT pastries fail by developing gluten — overworked, over-wetted or re-rolled, they turn tough and shrink in the tin.\n\nLAMINATED pastries fail when the fat stops being a sheet: too warm and it is absorbed into the dough, too cold and it shatters through the layers. Either way the pastry does not puff, and no oven temperature recovers it.\n\nCHOUX fails on consistency and on heat: too much egg and it spreads instead of inflating, too cool an oven and the steam arrives too slowly to lift anything.\n\nFILO fails by drying out, because it has no fat holding it and no elasticity to recover.\n\nKnowing which family a pastry belongs to therefore tells you which questions to ask when it goes wrong, which is most of the value in classifying them at all.
