Where laminated pastry came from
A technique with a genuinely traceable development, and an origin story that is mostly decoration.

A long-standing account of how something originated or was done. Recorded as tradition, which is not the same as recorded as fact.

The technique is older than the products it is famous for
Layering fat into dough by folding is documented in European cookery writing well before any of the pastries now associated with it. What changed over time was consistency rather than concept: reliable butter, controlled temperature and eventually mechanical sheeting turned an unpredictable technique into a reproducible one.
The croissant in the form recognised today — yeasted, laminated, crescent-shaped — is documented in France from the nineteenth century. Its relationship to earlier Austrian baking is genuine and is usually overstated: the shape and the name travelled, and the laminated yeasted dough that defines the modern product developed later.
The siege story
The most repeated croissant origin story attaches it to a specific siege, a specific city and a baker who raised the alarm, with the crescent shape commemorating a flag. It is a good story. It appears in print long after the events it describes, no contemporary source supports it, and food historians generally treat it as invented.

What the history explains about the baking
One thing, and it is worth the page. Lamination became reliable when the FAT became reliable — consistent butter, and later purpose-formulated roll-in fats with a wider plastic range than butter has.
That is the same fact the fat-plasticity model states from the other direction, and it is why a modern baker struggling with butter shattering or smearing is meeting a difficulty the technique carried throughout its history rather than doing something wrong.
