Lamination
Rolling and folding a dough around a sheet of fat to build alternating layers that steam forces apart in the oven.
A dough is folded around a sheet of butter and rolled out, and the fold-and-roll is repeated. Each repetition multiplies the layer count, so a small number of folds produces a large number of layers.
In the oven, water in the butter turns to steam and forces the dough layers apart, while the fat prevents them from merging. The dough layers set around the resulting gaps.
The entire technique depends on the butter remaining a continuous, plastic sheet throughout. Too cold and it fractures into fragments; too warm and it merges into the dough. Both failures produce the same visible outcome — butter leaking during baking and no rise — from opposite causes, which is why diagnosing this fault requires looking at the dough before it goes in the oven.

How to tell it has worked
- The butter block and the dough feel similarly firm when pressed — the single most important check.
- Rolled edges stay square and defined rather than rounding and squeezing butter out.
- A cut edge shows distinct, countable stripes rather than a marbled or uniform section.

The science behind it
Steam is the lifting mechanism, which is why the butter’s water content rather than its fat content does the work.
Fat plasticity and crystal structure
Lamination is the most demanding use of the plastic range: the fat must be soft enough to spread into a continuous sheet without tearing the dough and firm enough not to be absorbed into it. That is a narrow window, and butter’s is narrower than a roll-in shortening’s.

No pantry contains lamination. Puff pastry is defined by the process rather than by its four ingredients, which are the same as a shortcrust’s.
