Four constraints, not four national temperaments
GRAIN comes first. Wheat forms a gluten network and rye largely does not, so northern and eastern European breads built on rye developed around acidification and a pentosan-based structure while wheat regions developed around gluten. That is a difference in chemistry, and the traditions followed it.
CLIMATE decides fermentation. A warm region ferments faster and sours sooner, which pushes technique toward shorter bulk times or deliberate acidification; a cold one permits long slow fermentation without the dough running away.
THE OVEN decides the shape. Enclosed masonry ovens hold heat and suit large hearth loaves; a hot surface or a clay wall suits flatbreads; a domestic tin oven suits tin loaves. The bread that a tradition makes well is the bread its oven makes well.
WATER AND MILLING matter less than folklore suggests. The claim that a particular city’s water is why its bagels or its bread cannot be reproduced elsewhere is very widely repeated and BakeHQ has read no controlled evidence for it. Mineral content does affect dough, and the effect being large enough to be the decisive difference is a separate claim that the popular version does not establish.
Where the traditions genuinely are distinct
RYE BAKING is the clearest case. It is not wheat baking with a substitution — the gas is held by a viscous pentosan phase rather than a gluten film, acidification is structural rather than a flavour choice, and the faults are different faults. BakeHQ models it separately for that reason.
ENRICHED BREADS diverged along dietary lines as much as culinary ones. Challah is enriched without dairy, which is why its fat is oil and its behaviour differs from brioche in ways that are structural rather than stylistic.
