The cream cheese went in straight from the fridge

Very common

Cream cheese is firm at fridge temperature and softens considerably at room temperature. Cold, it breaks into lumps that the liquid ingredients cannot dissolve, and the natural response — beating for longer and faster — folds air into the batter rather than smoothing it. So the same mistake produces both faults at once: a lumpy texture and an aerated batter that will rise and then sink.

What to change

  • Bring the eggs and liquid to room temperature first

    Let eggs and any milk sit out before starting, and add the eggs a little at a time rather than all at once. If the mixture does begin to curdle, a spoonful of the measured flour beaten in usually brings it back. A split batter can be baked and will give a coarser, denser cake.

    Any creamed cake. Irrelevant to melted-fat and all-in-one methods, where there is no emulsion to break.

    Trade-off: Requires planning an hour ahead, which is the commonest reason it is skipped.

The custard was taken past the point where it set

Very common

A baked custard sets when egg protein unfolds and links into a network that holds the liquid. Heating past that point makes the network contract further and tighten, and the water it was holding is forced out. The visible result depends on how far it went: first a weeping, watery layer, then a grainy or curdled texture, then a rubbery, bouncy set. This is why a watery quiche and a rubbery quiche can be the same fault at two severities, and why more baking makes both worse rather than better.

What to change

  • Take the custard out while the centre still wobbles

    Look for the edges set and a circle at the centre — roughly the size of a coin for a quiche, a little larger for a cheesecake — that still moves as one mass when the dish is nudged. It should wobble like set jelly, not ripple like liquid. Take it out at that point and let it finish on the bench.

    Quiche, baked cheesecake, custard tart, bread pudding — any baked egg custard.

    Trade-off: It requires judging a moving surface rather than following a time, and an oven that runs hot will reach it sooner than any recipe says.

Preventing it next time

  • Soften the cream cheese properly — lumps in the bowl will still be lumps on the plate.
  • Stop baking while the centre wobbles; a grainy set is an overcooked one.

Grainy before the oven and grainy after it are unrelated

If the raw batter had lumps in it, nothing that happens in the oven will dissolve them. That is a mixing problem and almost always a temperature one: cold cream cheese does not blend, and beating it harder aerates the batter without smoothing it.

If the batter was smooth and the finished cheesecake is grainy, the egg overcooked. Protein that keeps contracting after it has set separates from the water it was holding, and that separation is what the tongue reads as grain. It is the same fault as a weeping quiche, in a product that shows it differently.
