The centre had not set when it came out

Common

A baked cheesecake is a custard, and its centre is the last part to reach setting temperature. It should leave the oven with a small area at the middle that still wobbles as a single mass, because residual heat carries that region through setting as it cools. Taken out while the centre is still fluid rather than wobbling, there is not enough stored heat to finish the job, and chilling only makes the fat firm — which feels like setting until it is cut and the middle runs.

What to change

  • Take the custard out while the centre still wobbles

    Look for the edges set and a circle at the centre — roughly the size of a coin for a quiche, a little larger for a cheesecake — that still moves as one mass when the dish is nudged. It should wobble like set jelly, not ripple like liquid. Take it out at that point and let it finish on the bench.

    Trade-off: It requires judging a moving surface rather than following a time, and an oven that runs hot will reach it sooner than any recipe says.

There was not enough egg for the amount of liquid

Common

Setting depends on enough egg protein being present to form a network that spans the whole mixture. Diluted too far, the protein sets in isolated regions rather than continuously, and the result never firms up however long it is baked — it simply dries at the edges while the middle stays liquid. Adding cream or milk to a fixed number of eggs, or scaling a filling up to a larger dish without scaling the eggs, are the ordinary routes into it.

What to change

  • Check the egg against the liquid before scaling anything

    Work out roughly how much liquid the recipe carries per egg, and keep that proportion when moving to a different dish. If a filling is being stretched to fill a larger tin, scale the eggs with the cream rather than only topping up the liquid.

    Quiche, custard tart, and any filling being adapted to a tin it was not written for.

    Trade-off: More egg makes a firmer, more savoury set — the trade is texture, not success or failure.

A no-bake filling had nothing sufficient to set it

Common

A no-bake cheesecake sets by one of three routes: gelatine forming a gel, whipped cream and cream cheese firming as their fat crystallises at fridge temperature, or an acid thickening a condensed-milk base. Each has a requirement — gelatine must be properly dissolved and not boiled, fat-set fillings need genuine fridge temperature and hours rather than minutes, and an acid-set filling needs the acid actually to be present. Miss the requirement and there is no mechanism left in the bowl to produce a set at all.

What to change

  • Give a no-bake filling real cold and real time

    Chill for several hours and preferably overnight, at proper fridge temperature and not in the door. If the recipe uses gelatine, check it fully dissolved and was not boiled. If it relies on whipped cream, whip it to firm peaks before folding, since a soft cream will not firm up later.

    No-bake cheesecake and any chilled set filling.

    Trade-off: It cannot be hurried, and a freezer firms the fat without setting the filling.

Preventing it next time

  • For a baked cheesecake, judge the centre by how it moves rather than by a time.
  • For a no-bake, give it overnight in a properly cold fridge and check the setting agent actually did its job.

Baked and no-bake fail for entirely different reasons

They look the same on the plate and they have almost nothing in common underneath.

A baked cheesecake is a custard. It sets because egg protein forms a network, and the only questions are whether it got hot enough and whether there was enough egg for the liquid.

A no-bake cheesecake contains no mechanism that heat would trigger. It sets because gelatine gelled, or because fat firmed in the cold, or because acid thickened a condensed-milk base. Chilling it longer helps two of those and does nothing at all for the third.

So the first question is not about the symptom. It is which of the two things you made.
