Brown sugar
Sucrose carrying molasses — which makes it acidic, hygroscopic and chemically different from white sugar, not merely darker.

Brown sugar is sucrose with molasses either retained or added back. That molasses is why substituting it for white sugar changes more than the colour.
Molasses is acidic, so brown sugar brings acidity to a formulation. Where the leavening depends on bicarbonate of soda, that acid is part of the reaction — and swapping to white sugar removes an acid the recipe may have been relying on. It is also hygroscopic: it holds water, which is why brown-sugar bakes stay softer and chewier for longer and why brown-sugar cookies are characteristically chewy rather than crisp.
Light and dark differ only in how much molasses is present, so the differences run in the same direction: darker means more acid, more moisture retention, more flavour and a denser result.

What the molasses does
Molasses makes brown sugar acidic and hygroscopic. The acidity can participate in a bicarbonate-based leavening system, and the water-holding produces a softer, chewier crumb that stales more slowly than the equivalent white-sugar bake.

What changes if it is left out
Replacing brown sugar with white removes acidity, moisture retention and flavour together. In a bicarbonate-leavened recipe the lost acid can leave the leavener partly unreacted, which tastes soapy and rises less than expected.

Why it is not white sugar plus flavour
The most common thing said about brown sugar is that it is white sugar with caramel notes. That description is right about the taste and wrong about everything else.
It is acidic where white sugar is neutral, and it holds water where white sugar does not. Those two properties change the leavening chemistry and the texture, which is why the same cookie recipe made with each produces one chewy and one crisp — from the same weight of the same basic sugar.
