The case was not blind baked, or not for long enough

Very common

Pastry sets by drying and by starch gelatinisation, both of which need the base to get hot. A wet filling holds the base near the boiling point of its own water and supplies more moisture, so it stays damp and soft while the rim above the filling line cooks normally.

What to change

  • Blind bake in two stages

    Bake the lined and weighted case until the sides are set and hold their height, then remove the lining and weights and return it to the oven until the base is dry and lightly coloured. The second stage is the one that prevents a soggy base and the one most often skipped.

    Any tart with a wet filling. Unnecessary for a filling that bakes dry.

    Trade-off: Adds time, and an over-blind-baked case can become too hard.

The filling released too much liquid

Common

Fruit and vegetable fillings release water as their cell walls break down during baking. A case that was properly blind baked can still be overwhelmed if the filling contributes more liquid than the bake can drive off, which is a different fault from an unset case and has different fixes.

What to change

  • Seal the baked case before filling

    Brush the hot blind-baked case with beaten egg white or egg wash and return it to the oven briefly. The protein sets into a thin film that slows moisture penetration.

    Tarts with wet fillings that will sit before serving.

    Trade-off: Adds a step, and a heavy coating can be noticeable in texture.

The base had no direct source of heat

Common

Air transfers heat far more slowly than a solid surface in contact with the tin. A tart on a wire shelf receives basal heat only through circulating air, which is often not enough to dry a filled base. The same tart on a preheated tray or stone receives conductive heat immediately.

What to change

  • Bake on a preheated tray or stone

    Preheat a heavy baking tray, stone or steel with the oven and place the tart tin directly onto it. The base begins cooking immediately on contact instead of waiting for the air to heat it.

    Tarts, pies and pizza. The effect is largest for anything with a wet filling on a thin base.

    Trade-off: The oven takes longer to preheat with a heavy mass in it.

The pastry was overworked

Very common

Shortcrust depends on fat coating flour so gluten cannot form a continuous network. Working the dough after the water is added develops that network anyway, giving a tough, leathery pastry that also shrinks in the tin as the stretched network contracts on heating.

What to change

  • Handle the pastry less once the water is in

    Add the water all at once, bring the mixture together with as few movements as possible, and stop while it still looks slightly rough. Roll once where possible rather than re-rolling.

    Shortcrust and other short pastes. The opposite advice applies to bread.

  • Rest the pastry after rolling

    Chill the lined tin for at least half an hour before baking. This relaxes the tension created during rolling and firms the fat.

Why the sides can be perfect while the base is raw

The rim sits in hot air above the filling line and cooks like any pastry. The base sits under a wet filling that holds it near the boiling point of its own water and continuously supplies more moisture.

So the two parts of the same case are in genuinely different environments, and the base’s environment is one in which pastry cannot dry out. Every effective fix works by changing that environment — removing the moisture, blocking it, or supplying enough heat from below to drive it off anyway.

    Air is a poor conductor, so a tart on a wire shelf may never get enough basal heat to drive the moisture off.

  • The pastry was overworked

    A contributing rather than a primary cause: overworked pastry is also usually rolled thinner and shrinks, which changes how the base sits and cooks.
