The pastry was stretched to fit the tin

Common

Gluten is elastic, and elastic means it returns. Pastry stretched to reach the rim of a tin is held under tension by the tin until heat sets it — and while it is still soft in the early oven, that stored tension pulls the sides back down. Nothing about the formula is wrong; the dough is doing exactly what an elastic material does.

What to change

  • Lift the pastry into the tin instead of pulling it

    Roll larger than needed, drape rather than stretch, and press into the corners by lifting the overhang inward so the pastry settles rather than spans. Trim after baking rather than before if shrinkage has been a recurring problem.

Common

Rolling develops and tensions the gluten network whether or not that was the intention. Given time the network relaxes and the tension dissipates; given none, it is still there when the pastry meets the heat and it contracts as the dough softens before it sets.

    Chill the lined tin for at least half an hour before baking. This relaxes the tension created during rolling and firms the fat.

The pastry was overworked

Very common

Shortcrust depends on fat coating flour so gluten cannot form a continuous network. Working the dough after the water is added develops that network anyway, giving a tough, leathery pastry that also shrinks in the tin as the stretched network contracts on heating.

What to change

  • Handle the pastry less once the water is in

    Add the water all at once, bring the mixture together with as few movements as possible, and stop while it still looks slightly rough. Roll once where possible rather than re-rolling.

    Shortcrust and other short pastes. The opposite advice applies to bread.

A spreadable tub was used where a block fat was needed

Common

Spreadable products are formulated to stay soft cold, and one way to achieve that is a higher water content and a lower fat content than butter. In a pastry or a rubbed-in mixture that extra water hydrates the flour and develops gluten in a method whose whole purpose is to prevent it, so the result is tough. The cause is invisible because the fat looked like the right ingredient.

What to change

  • Use a block fat with a stated high fat content

    For pastry, rubbed-in mixtures and anything creamed, choose a plant fat sold as a block for baking with a fat content close to butter’s, rather than a spreadable tub. Where only a softer spread is available, chill it hard and accept that laminated and short pastries will be the least forgiving.

    Any dairy-free adaptation of a method that needs a solid fat. Irrelevant where the fat is melted anyway.

    Trade-off: Baking blocks are less widely stocked and cost more than tubs.

Preventing it next time

  • Roll larger than the tin needs and lift the pastry in, letting it settle rather than span.
  • Chill the LINED case before baking. Resting the dough before rolling does not prevent this fault, because the tension is created by the rolling and lining that come after.
  • Keep the dough cold and the handling brief, and treat re-rolled trimmings as a second-class pastry rather than an equivalent one.
  • Trim the overhang after baking rather than before, so shrinkage costs height that was surplus.

Why baking beans do not fix this

Blind baking with beans holds the base flat and stops it puffing. It does very little about the sides pulling down, because the beans are pressing outward on pastry that is contracting along its length.

The two problems are often confused because both are solved during blind baking. A base that domes upward is a steam problem and beans are the answer. Sides that sink are a tension problem and only resting and gentle lining address them.

Possible causes
