A binder replaced an egg that was aerating
CommonEgg performs several distinct functions and a gel replaces exactly one of them. Flax and chia mucilage binds; it whips to no foam and coagulates into nothing. Where the formulation relied on whisked egg for its aeration, replacing it with a gel removes the leavening entirely and adds weight, so the bake comes out short, dense and often damp.
What to change
Work out which job the egg was doing first
Identify what the egg was for before choosing anything to replace it. If the method whisks the eggs, or whisks the whites separately, the egg is aerating and a gel will not do. If the eggs are stirred into a batter that also contains a chemical leavener, the egg is mostly binding and enriching, and a gel usually will. If the mixture is meant to set — a custard, a curd, a set filling — the egg is the structure and no common replacement provides it.
Every egg-free adaptation. It is the step that decides whether the adaptation can work at all.
Trade-off: Sometimes the honest answer is that the formulation has to change rather than an ingredient being swapped.
Replace lost egg aeration with a gas source, not a gel
Where the egg was aerating, the adaptation needs a leavening route rather than a binder: a chemical leavener, an acid-base pair, or aquafaba whisked to a foam where a whisked white was what the recipe used. A gel added alongside will bind the crumb but will not lift it.
Sponges, whisked cakes and anything whose method involves beating eggs to a foam.
Trade-off: Chemical leavening produces a different crumb from egg foam — coarser and more open — so the result is a good cake rather than the same cake.
