A binder replaced an egg that was aerating

Common

Egg performs several distinct functions and a gel replaces exactly one of them. Flax and chia mucilage binds; it whips to no foam and coagulates into nothing. Where the formulation relied on whisked egg for its aeration, replacing it with a gel removes the leavening entirely and adds weight, so the bake comes out short, dense and often damp.

    Identify what the egg was for before choosing anything to replace it. If the method whisks the eggs, or whisks the whites separately, the egg is aerating and a gel will not do. If the eggs are stirred into a batter that also contains a chemical leavener, the egg is mostly binding and enriching, and a gel usually will.     Trade-off: Chemical leavening produces a different crumb from egg foam — coarser and more open — so the result is a good cake rather than the same cake.

Egg protein sets irreversibly on heating and is a substantial part of the structure in many cakes and most custards. A hydrocolloid gel thickens and does not set: it stays a gel. The result is a bake that looks done and collapses or stays gummy in the middle as it cools, because nothing became rigid.

Too much fruit purée replaced the egg

A fruit purée is mostly water with sugar dissolved in it. Used as an egg replacement it adds liquid and sweetness and supplies no protein, no foam and no setting. Beyond a small proportion the batter is too wet to support itself and too sweet to set at the temperature it would have, so the bake sinks and stays gummy near the base.

Why 'one flax egg replaces one egg' keeps failing

The formula is stated as though eggs were interchangeable units, and they are not. An egg is doing some combination of at least six things — binding, aerating, setting, emulsifying, adding water and adding colour — and which of them matter depends entirely on the recipe around it.\n\nA flax gel does one of the six well. In a brownie, a flapjack or a dense cake, where the egg was mostly holding things together, it substitutes convincingly. In a sponge whose lift comes from whisked egg, it substitutes for nothing that mattered, and the resulting cake is short and heavy no matter how carefully the gel was made.\n\nThe rule is not wrong so much as unscoped. BakeHQ records substitutions against a single named function for exactly this reason, and the phrase 'replaces one egg' has no scope in it at all.
