Naan
A leavened flatbread cooked in minutes against a very hot surface — a heat regime domestic ovens cannot reproduce, which explains most of what goes wrong with it.

Naan is a leavened flatbread, usually enriched with yoghurt or milk and some fat, traditionally cooked by slapping it onto the inside wall of a tandoor — a clay oven running far hotter than a domestic one.
THE HEAT IS THE PRODUCT. At tandoor temperatures the surface water flashes to steam almost immediately, the bread inflates into a bubble, and the outside blisters and chars before the inside has time to dry. The whole cook takes a minute or two. A domestic oven at its maximum cannot deliver that rate of surface heating, which is why home naan is usually made in a very hot dry pan instead — the pan reproduces the conduction even though it cannot reproduce the radiant heat.
THAT EXPLAINS THE COMMON FAULTS DIRECTLY. Naan that does not puff has usually not met a hot enough surface: the steam forms slowly, escapes through the dough rather than lifting it, and the bread bakes flat. Naan that is tough and dry has spent too long cooking, which is what happens when the surface is not hot enough to finish it quickly.
THE ENRICHMENT IS FUNCTIONAL. Yoghurt contributes water, acidity and some fat; the fat tenderises and keeps the bread soft after cooking, which matters for something eaten torn rather than sliced. As with any enriched dough, fermentation runs slower than a lean dough at the same temperature.

Why domestic naan is made in a pan rather than an oven
It looks like a compromise and it is closer to the right answer than the oven is.
What a tandoor supplies is a very hot surface in direct contact with the dough. A dry cast-iron pan on a high flame reaches a surface temperature well above what a domestic oven’s air can deliver, and contact conduction transfers heat far faster than hot air does. The bread therefore gets the rapid surface heating it needs even though the oven route cannot provide it.
What the pan does not reproduce is the radiant heat from the tandoor walls cooking the top at the same time, which is why home naan is often finished under a grill or flipped, and why the blistering is less pronounced.
