The form follows the oven

A flatbread is thin because of how it is cooked, not the other way round. Where heat arrives from a hot surface — a stone, a griddle, the wall of a clay oven — it reaches the middle of a thin piece of dough almost immediately and a thick one not at all. Every tradition that cooks bread against a surface rather than in an enclosed chamber arrives at something flat.

That is why flatbreads are so widely distributed without needing to have travelled. Naan, pita, tortilla, injera, lavash, chapati and focaccia are not variations on one another; they are what happens when different grains and different ovens meet the same physical constraint.

The leavening varies freely within that constraint. Some are unleavened, some yeasted, some raised by a fermented batter, and the shape stays flat regardless — which is the clearest evidence that the heat is doing the deciding.

What the evidence supports, and what it does not

Charred remains interpreted as bread-like preparations have been recovered from sites substantially older than the domestication of cereals, which places some form of ground-grain baking before agriculture rather than after it. That is a significant finding and it is a finding about a handful of sites.

What it does not establish is a first bread, a first baker or a place where bread began. BakeHQ does not name one, and treats accounts that do as storytelling.

The same caution applies to the popular claim that leavening was discovered by accident when a dough was left out in a particular ancient kingdom.
