Lard
Rendered pork fat: plastic over a usefully wide range, essentially water-free, and the traditional pastry fat for reasons that survive scrutiny.

Lard is rendered pork fat. In baking terms it is a plastic solid fat with essentially no water, which puts it functionally close to shortening and structurally some distance from butter.
Its reputation in pastry is earned rather than nostalgic. It stays plastic across a wider range of temperature than butter, so it is more forgiving in a warm kitchen and holds its integrity through rolling. It contains no water, so it does no gluten development on the baker’s behalf and produces a notably short, tender crust rather than a flaky one. Traditional hot water crust and many shortcrust recipes use it for exactly these properties, often blended with butter to recover the flavour.
WHAT IT IS NOT IS A UNIVERSAL FAT. It carries a savoury flavour that many sweet bakes cannot absorb, and its melting behaviour differs enough from butter that creamed cakes made with it are recognisably different. Rendered leaf lard — from around the kidneys — is milder and firmer than general-purpose lard, and the two are sold under the same word.
It is not vegetarian, which is the reason vegetable shortening exists.
Composition and specification
Water content
Essentially none, in common with shortening and unlike butter. A recipe swapping butter for lard by weight loses the butter’s water and its steam contribution along with its flavour.

What changes if it is left out
Shortening is the closest functional replacement — plastic, water-free, neutral — and it is what most modern recipes have already substituted. Butter replaces the flavour and not the working range, and adds water. In a hot water crust, which depends on the fat behaving predictably when molten and then setting firm, neither swap is neutral.

Pronounced, and the reason for its reputation in pastry: with no water of its own it develops no gluten on the baker’s behalf, so the crust comes out short rather than flaky.
