Lard vs shortening

Two solid fats with almost no water, used for the same purpose, with genuinely different crystal behaviour and flavour.

The short answer

Both are close to pure fat with little or no water, which is why both make a shorter pastry than butter does. Lard has a coarser crystal structure and a mild savoury flavour; shortening is engineered for a consistent plastic range and is close to flavourless. For pastry the practical difference is that lard gives flakiness and shortening gives uniform shortness.

These are real distinctions that are unlikely to change your decision. They are listed so you can stop thinking about them rather than left out so the comparison looks decisive.

Why both beat butter for shortness and lose to it on flavour

Butter is around a sixth water. That water turns to steam and contributes lift, and it also hydrates flour and lets some gluten develop — which is why an all-butter shortcrust is slightly tougher than one made with lard or shortening.

A fat with no water cannot do either. It coats the flour, interrupts the network, and produces a pastry that crumbles rather than resists. That is the whole of the case for using them.

The traditional British compromise — half butter, half lard — exists because it takes the shortness from one and the flavour from the other, and it is a better answer than either alone for a savoury pie.
