Choosing a fat, and substituting one honestly
Butter does at least five separable jobs. Work out which one the recipe needed and the substitution question answers itself.

Name the job before you name the fat
Every substitution question is unanswerable until you know what the fat was doing. Butter is doing at least five separable things, and no replacement preserves all five.\n\nSTRUCTURE. In anything creamed, rubbed in or laminated, the fat has to be a solid that holds a shape. Only a solid fat can do this and no liquid can, at any ratio.\n\nAERATION. Beaten air is held in the crystal network of a plastic fat. This needs not just a solid but a solid in the right state and with a fine enough crystal structure.\n\nWATER. Butter is roughly a sixth water. That water becomes steam, and in a laminated dough the steam is the leavening.\n\nTENDERNESS. The fat lubricates and interrupts the continuity of the protein and starch structure, so the bake is not perceived as tough. Every fat does this, including liquid ones.\n\nFLAVOUR AND BROWNING. Butter’s milk solids brown; most fats contribute nothing here.\n\nOnly the fourth of those is common to all fats. That is why oil substitutes cleanly into a muffin and catastrophically into a puff pastry.
What each fat can and cannot do
BUTTER. Solid, plastic over a narrow range, about a sixth water, browns, tastes of butter. It can do all five jobs and is fussy about temperature while doing them.\n\nSHORTENING AND LARD. Solid, plastic over a wide range, essentially no water, little or no flavour. Structure, aeration and tenderness yes; steam and browning no. Lard tastes savoury; shortening tastes of nothing.\n\nGHEE AND CLARIFIED BUTTER. Butter’s fat and flavour without its water or milk solids. Tenderness and flavour yes; steam and milk-solid browning no. Often sold soft, so check the state before treating it as a block fat.\n\nLIQUID OILS. Tenderness only. No structure, no aeration, no water, and — except olive oil, chosen for exactly this — no flavour.\n\nCOCONUT OIL. Whichever of the two rows above matches the temperature of your kitchen today. Solid, it is harder and more brittle than plastic butter; warm, it is an oil.\n\nMARGARINE AND VEGAN BLOCK FATS. A category rather than a substance. Formulations vary in fat percentage, water and solid-fat profile, and a block sold for baking behaves quite differently from a soft spread sold for toast. The packet is the only reliable guide.
By product, and why
SHORTCRUST AND OTHER SHORT PASTRY want a fat that stays in discrete pieces and shortens strongly. Lard and shortening excel; butter is used for flavour and is less forgiving in a warm kitchen. Many traditional recipes use half and half for exactly that reason.\n\nLAMINATED DOUGH wants a plastic fat that will spread into a continuous sheet without tearing the dough or being absorbed by it, AND wants its water for steam. Butter is the reference and roll-in shortenings exist because butter’s plastic range is inconveniently narrow. Ghee, coconut oil and any liquid oil are all poor choices here for different reasons.\n\nCREAMED CAKES need a plastic solid. Softened butter is the reference; melting it removes the mechanism entirely. An oil-based cake is not a creamed cake made wrong — it is a different family with a chemical leavener doing the work.\n\nCOOKIES are mostly a spread question, and spread is governed more by dough temperature at the moment it meets heat than by which fat was used. A higher-melting fat spreads less; so does chilling.\n\nBREAD uses very little fat and uses it for softness and keeping rather than structure — a few percent on flour weight is typical. Almost anything works, and the choice barely shows.
Substituting: preserve the job, then fix what you broke
Work in this order.\n\nFIRST, is the recipe relying on the fat being SOLID? If it creams, rubs in or laminates, only another solid fat is a candidate and the question is over for oils.\n\nSECOND, is it relying on the fat’s WATER? Laminated doughs are, and so are some pastries. Swapping butter for a water-free fat by weight makes the formulation drier and removes a leavening contribution at the same time.\n\nTHIRD, is it relying on FLAVOUR OR COLOUR? If so, a neutral fat will work structurally and disappoint.\n\nBakeHQ publishes no conversion ratios for any of this, and that is deliberate. The correct adjustment depends on which of the jobs above mattered in the particular recipe, and a single number — “use three quarters as much oil” — is a guess dressed as a rule. What the numbers would tell you is already in the direction: water-free fats leave a formulation drier, and butter swapped in adds both water and flavour.
Two claims worth not believing
“OIL MAKES CAKE MOISTER THAN BUTTER.” The observation is real and the explanation is backwards. Butter brings water into a batter and oil brings none, so swapping butter for oil by weight makes a cake DRIER in water terms. What oil does is stay liquid at eating temperature, where butter resolidifies — so the crumb is lubricated rather than shot through with set fat crystals, and reads as softer. The property is mouthfeel, not moisture, and the difference grows over days because staling is partly perceived as dryness.\n\n“MARGARINE AND BUTTER ARE INTERCHANGEABLE.” Sometimes, and you cannot tell from the word. Margarine is a category whose members differ in fat percentage, water content and how much of the fat is solid at a given temperature. A hard block sold for baking may substitute closely; a soft spread sold for toast carries more water and less fat and will not cream or laminate the same way. The useful question is what is in the tub, not what is on the label.
