A pretzel is a stiff yeasted dough, shaped, dipped in an alkaline solution and baked.

The dip is the whole point. Alkaline conditions accelerate the Maillard reaction, so a dough surface that would otherwise bake pale browns quickly and deeply, producing the mahogany colour and the distinctive flavour that no amount of extra baking gives an undipped pretzel. Traditional practice uses food-grade lye; a bicarbonate of soda solution is the domestic substitute and gives a milder version of the same effect, which is why home pretzels are usually paler.

Baking bicarbonate of soda on a tray before dissolving it raises the pH of the solution further, which is why that step appears in careful recipes.

The dough itself is low-hydration and firm, giving the dense chew the shape is built around.

Why a home pretzel can taste soapy

A soapy or metallic taste is unreacted alkali left on the surface. With a bicarbonate of soda dip this usually means the solution was too concentrated, the dip too long, or the pretzel underbaked — the reaction that consumes the alkali is the same browning that colours the crust, so a pale pretzel is one where much of it is still sitting there.

The fix is a shorter dip and a fuller bake rather than a weaker solution, because a weaker solution removes the colour and flavour the dip was for.
