Psyllium husk
A soluble fibre that forms a strong gel with water, giving gluten-free dough something closer to handleable elasticity — at a measured cost in crumb gumminess.

Psyllium husk is the seed coat of Plantago ovata, largely soluble fibre, which takes up a great deal of water and forms a cohesive gel. In gluten-free bread that gel does something the gums do not: it makes the mixture behave enough like a dough to be shaped by hand rather than poured, which is why psyllium-built loaves look more like bread and less like something baked in a tin because it had to be.
The trade is measurable and is usually omitted from enthusiastic accounts. In a controlled comparison, raising psyllium increased crumb hardness and gumminess and produced fewer, larger cells rather than a finer crumb. It made the dough more elastic and harder to sheet. Those are the same property read as a benefit and as a cost.
Whole husk and powder are not interchangeable by weight, because the powder is denser — a spoon of one and a spoon of the other are different quantities of the same thing. BakeHQ states no conversion, because the ratio depends on the grind.

Measured effect on crumb
Raising psyllium in a gluten-free formulation increased crumb hardness from 58.9 N to 64.7 N and gumminess from 35.3 N to 40.7 N, and reduced cell count from 11 to 8 cells per square centimetre — a coarser structure. It reduced the loss modulus and loss tangent of the dough, indicating more elastic behaviour, and made sheeting harder.

What changes if it is left out
A gluten-free bread mixture loses most of its cohesion and reverts to a batter that must be poured and baked in a tin. Gas retention itself may be maintained by another hydrocolloid; what is lost is the handling.
Follows from the gel-forming mechanism rather than being separately measured.

It is under-studied relative to how popular it is
Psyllium has become the default recommendation in gluten-free bread baking over the last decade, and the controlled literature has not kept pace: xanthan and the methylcellulose derivatives are far better characterised. One of the two papers BakeHQ relies on for hydrocolloid mechanism does not test psyllium at all.
So the claims here are deliberately narrow — the gel-forming behaviour, the handling benefit and the measured gumminess cost — and BakeHQ makes no claim that psyllium outperforms the alternatives, because that comparison has not been read at passage level.

Psyllium takes up many times its own weight in water and holds it as a gel. Adding psyllium without adding liquid does not thicken a mixture so much as dry the rest of it out.
